    This is a good shortcut for falafel, in my culture falafel is street food, we make it with split Fava beans rather than chickpeas, traditionally we don't add any leaveners we whip them until they look become lighter in color and creamy smooth. Then we cover with sesame and crushed coriander before frying. We don't play with it to form it so we don't deflate it. In our mix, we use soaked and drained split Fava beans, salt, leeks, garlic, onions, ground cumin and coriander, garlic, cilantro, parsley is optional, and a tiny bit of water. Traditionally we make it with enough but not too much herbs so it doesn't get too densed from the liquids, not too much onions. Color is usually light pistachio green after all the whipping.

    I made these falafels last week and they turned out great! I froze half of them for an easy weeknight dinner in the future. One thing I would add is to make sure all your ingredients are completely dry otherwise they lead to too wet a mixture.

      If you want a great humus recipe, my personal favorite is from Refika's Kitchen. She's also got a falafel recipe, and I think I'll try to use her seasoning style with the recipe from ATK.

    With all due respect and coming from a Lebanese, tahini sauce which we call "tarator" does not have yogurt in it. It consists of sesame paste, ground garlic, lemon juice, and a little water to thin it out. Also Lebanese falafel has chick peas and fava beans. Love ATK!

      I was literally just about to write that. I also tend to prefer my falafel in a "greek" style pita (no pocket), a "Roti", or Labanese mountain bread (i can't recall it's name)

      @@user-ir5ul1ph1c lol I had to look it up, the one I had was similar, but the "bread" was a bit thicker. Though I imagine that's just individual baking decisions. The one I remember the bread was almost like Lavash, in thickness

    I made this recipe and it was a little bland so, I added a little chilli powder, garlic powder, and onion powder along with the coriander, cumin, salt and cayenne pepper. It was Delicious! Thank you Elle!

    I make falafel from the recipe in your Mediterranean cookbook, and they're great! When we had houseguests coming, I made a double batch and froze them raw. When they arrived I thawed them out, fried them up, and we all had a great meal!

    This is an epic recipe and thank you so much for finally giving me tasty falafel. I did add some EVOO to help with the processing and I doubled the quantity. I added Kashmiri red chilli powder instead of Cayenne, but the end result was a delicious, crispy falafel with four lunchboxes worth ready to fry in my freezer. Chipotle mayo also works as a dip!

    When I lived in a suburb of Detroit I had my favorite falafel restaurant. They would serve it in a naan wrap. It was wonderful.

    We used to watch you religiously every Saturday on PBS before we were no longer able to get the channel. Needless to say we were thrilled when I discovered you here on CZcams. It was a bit weird seeing all of the changes at first but quickly fell in love again. Since I last saw you I have been battling spinal cord injuries and surgeries, beast cancer, radiation treatments and chemo treatments and then endometrial cancer triggered by one of the chemo drugs meant to keep the breast cancer from returning. It has been a crazy scary 10 years as I battled one life threatening health issue after another and some at the same time. I am finally finished with my treatments and deemed cancer free. Over the last 29 years I have developed a lot of allergies including many food allergies which has made finding things I can safely eat a challenge. I have been slowly been removing different foods and trying to get back to how my mother used to cook. That means fresh fruits and vegetables and only ingredients that haven’t been processed, no GMOS, nothing in a box or mix, canned items only if they don’t have any additives or unnatural ingredients and the same with frozen items. The changes in my body and how I feel are amazing. I have started making my own bread with both gluten and gluten free and I haven’t had the reactions to the gluten or grains that I normally have gotten which is a huge win. My next project is to make homemade pasta. This pandemic has actually been good for my family because I have used it to completely change how we shop for food, how I prep it and freeze it in portions that I generally use when creating a meal, how I make and cook each dish from scratch with only pure ingredients. Because I am immune compromised and have other health issues that put me at risk for the virus we are taking extra precautions to protect and prevent it from entering our home and food. I am grateful to have access to your videos and recipes to help us on our journey of reclaiming our health.

    This is very similar to my favorite falafal recipe, but I prefer to use garbanzo flour instead of AP. I think it's tastier.

    I like Claudia Roden's version from "The New Book of Middle Eastern Food". If you use a knife to finely chop the onions and herbs you can avoid using a flour binder.

    I made this tonight and it was sooo good! Super flavorful and just as good as my favorite falafel place. Only issue I had was the amount of water that started seeping out from the onions once I added salt to the mixture. It was a very loose moist batter without any stickiness (even with the flour slurry) so I ended up adding a tsp of corn starch. I've got an extra batch of them ready to fry in my fridge and I can't wait to eat them again!

    Best falafel in Egypt. ... They made it for thousands of years. ...now with different flavours ....

    I made these! They are good. Really nice flavor. I think I will pulse the chickpeas a little smaller next time, but they worked really well. Only one ball broke apart a little when frying, which is especially impressive given how course the chickpeas are. I will be making these again!

    I like the idea of being able to freeze them after forming; I don't find myself needing to make 24 falafel patties in one sitting, ha!
    I was wondering, though, how to thaw them: would you simply let them thaw in the refrigerator like you would meats or fish, etc? And, will they retain a lot of moisture (I've made veggie patties that I have frozen after forming, and they retain a lot of moisture after thawing. Usually I have to add more of whatever breading used to help absorb the moisture). Thanks for the content!!

    Actually... the "green" in falafel can be when it's made with ful (fava beans), instead of chickpeas (falafel).

    This is a new version of tahini, we use it in every kind of food, this is the first time I see tahini made with yogurt. We make it the same way, excluding yogurt, add some vinegar maybe one or teaspoons, cumin and coriander.

    Falafel is absolutely nice foods, I use an Air fryer to cook it, not frying, also I have a beans hand mill grinder and I do not use the food processor. Very healthy if you do not fry it can be baked as well

    i found 350f to be best but I made disks which are thinner so less time to heat centers. Such an amazing thing to eat and so many variations you can do.

    There was a place in Boston when I lived there that I used to love to get falafel from! Falafel also freezes beautifully and reheats beautifully and crispy in the air fryer! :-)

    I love falafel and have had it countless times. Prefer the wraps simply because everything is fairly evenly distributed. Base of hummus, smashed falafel, tomato, pickled veg and generous tahini...every single bite start to finish.

    أحسنت وقمت بعملها بطريقه جميله ومشهيه للعين.... .ولكن.....نخلط الطحينه ب٣ ملاعق من عصير الليمون ثم نضع الماء تدريجيا فالملح...اما اللبن فهو اختياري....بالنسبه للفلافل يجب ان تكون الخلطه أنعم بثلاث مرات مما خلطت.......ل ٢ كوب حمص تنقع ليله كامله بعد غسلها......المواد المضافه هي١راس بصل متوسط ٤سن ثوم ١ضمةبقدونس صغيره ١ضمة كزبره صغيره وتطحن مع الحمص ..تضاف البهارات الناعمه الجافه على الخليط بعد اخراجه من محضرة الطعام وهي ملعقه صغيره من كل مما يلي ملح فلفل اسود كزبره ناشفه كمون... ونصف ملعقه صغيره بكنج باودر ونصف معلقه صغيره بيكربونات الصوديوم..تخلط المواد جيدا وتكون العجينه طريه وليست صلبه وتوضع بالثلاجه نصف ساعه وتكوّرحبات الفلافل باي اداة مناسبه او بملعقة طعام صغيره وتوضع في زيت نباتي محمى وعلى حراره متوسطه...وصحتين....
    ملاحظه:اذا رغبتم بتفريز الفلافل فيكون ذلك بدون وضع البهارات الجافه المنطحونه وبدون مواد الرفع البكنج باودر والصودا...وبتم وضعها عند ذوبان عجينة الفلافل بعد اخراجها من المجمد.

    I just tried this and something about this recipe felt a little off. My mix was much less green and much more crumbly, so I had to add a bunch more flour to make it even shapable. It definitely felt like I used too much of the chickpeas.
    When you say 8oz, are we talking 8oz in volume, like 1 cup, or are we talking 8oz in weight? Because I used a scale and the amount of chickpeas I ended up with looked like much more than in the video, but perception can be deceiving.
    Anyway, even though I had a bit of a hassle, they turned out pretty great. Next time I'll definitely try to only use a cup of chickpeas, which would be about 1oz less.

      ATK/?Cooks Illustrated does not get revenue from advertisers so there is no bias in their recipes. Signing up for an account/ subscription funds their work.

    Any storing tips when freezing in case they stick together?

      Freeze them flat on a cookie sheet first. When frozen, then transfer them to a container or freezer bag and then put back in freezer.

      Exactly! That way they don’t stick in the bag. Works great for berries or anything you want to freeze.
