You don't need to trim brisket. Just cool it with fat-cap up. The fat will render into the meat for extra juiciness
Assuming you've never cooked a brisket. Whole briskets have such a thick layer of fat that will never render
Well you’re not maximizing every part of the brisket. I would trim the fat and turn it into tallow and any extra meat trimmed from the brisket turn into burgers
