Thanks for mentioning the Engine AutoStart Enable and Engine RPM Interlock. Is there a way to disconnect engine startup sequence from throttle? I only want to have startup sequence from the RPM + button. Sometimes I like to run silent (without engine noise, but I still like access to horn and bell, coupler, etc..) and the only way I have found thus far is Mute.

No, steam locos take hours to get hot so we decided to disregard a startup sequence. George talks about this more here: czcams.com/video/GwTI_gRBxEc/video.html

Are there any application settings that can change any of the aspects of the display? I'm thinking in particular about that clown nose throttle.

Yes the Blunami App is only available for apple product right now.
