Kimmy - you need to make homemade refried beans in your instant pot! They are sooooo good and soooo easy! Just put dry pinto beans, onion, garlic, spices and water in your instant pot and pressure cook. When they get done I just wazz mine with my immersion blender to thicken them up a bit. They thicken as they cool and the beans make burritos delicious!
When I make my burritos we add Serrano peppers for My husband and I. The thing I would do different if I were you is add way more cheese than that. Lots of cheese makes the best burritos. Then I put them all on a big pan and bake them til the tortilla gets kind of a little brown and crispy. Then I freeze them. When we want to eat one we just microwave it for a few minutes. Yum!!

So watching these make ahead, fill your freezer meals and tips are so helpful! I share your links with my support group...and they are loved! When I have my " blue sky" days and have extra energy I make sure to use it wisely... And cooking extra sauces, soups, sandwiches, etc for the freezer is the best way to take care of myself on the bad days. My fav sandwiches are... Ham and cheese from freezer to toaster oven cheesy warm and gooey! Or fry up thin sliced beef, with mushrooms, peppers and onions.. Cool and add cheese freeze on a keisser and they are great to grab on days when I am too sick to cook. You inspire me and I love your ability to give and share with the world! Thank you Kimmie!

Wrap each pizza bagel up in a little bit of wax paper, folding it all around each one, & then you can freeze it without the pieces falling off, and you can even “nuke” it in the microwave, still wrapped in wax paper!!

Burritos: take a roast and cube into small pieces. Brown with pepper and salt. My sister would use beef broth with flour to make a gravy. I always used corn starch and broth. Add the broth with green chilies and heat through. If you want spicy you can add whatever Mexican seasoning you want. That will go on the tortilla with cheese (can be cheddar, or Mexican blend, or pepper jack...whatever you like)

I make burritos for my husband to take to work... every freaken day!... I it's never the same though. I use the leftovers of the dinner before so it's not really necessary to freeze my burritos... in case I dont have leftovers then I fry an egg in so many different ways then I add one type of meat like ham, bacon, chicken from the freezer, or just onions if I don't have meat. To give it a kick I put sriracha sauce on top and done! I fold it and put on a PAPER napkin and on a thermos to keep worm until his lunch hour. (The paper napkin are better then the plastic wrap, I'm getting cloth napkins in the future, the help reduce waste and also prevents freezer burns)

Amen to freezer sandwiches. I do this on a regular basis. We have 11 children (9 still at home and another on the way), so it DOES take time making this many sandwiches. Being able to pull them out of the freezer is golden! A couple years ago, we had our house on the market. Oftentimes, we would get showings right at lunch or dinnertime. What a blessing it was to pull out sandwiches from the freezer and not have to hit a drive thru or frantically try and clean up a meal mess. And for mamas who have to pack school lunches, what a time saver this is. Sandwich is perfectly thawed by lunch time. We homeschool, but we still do this and usually pull them out in a pinch.

Making sandwiches ahead is a brilliant idea, especially if you have a large family. Besides saving time when packing lunches, it allows for last minute family fun plans without wasting the money eating out. Kids want to go to the zoo last minute, grab a few sandwiches and some bottles of water and out the door you go. Another great video Kimmy! Thank you for sharing these great ideas.

New here and loving this series! 2nd video I've watched and I'm hooked. Not so much a burrito I make, but since it is just my husband, our 2 year old and myself we always have leftovers from taco night. I like making some scrambled eggs and either mixing in the taco meat or adding separately into taco shell with beans and having breakfast tacos (don't forget the sour cream and salsa). As I am typing, I am realizing I need to make taco breakfast burritos and freeze them! I can't wait for dinners and snacks. So glad you popped up in my recommended videos.

It’s just me & hubby now.we are getting close to retirement age, both work full time, and I still do freezer meals. It’s such a time and money saver. I’m a mental health recovery facilitator and some days are exhausting. It’s so nice to be able to come home and throw something in the instapot or oven and just decompress while dinner is cooking. Such a life saver. I still am not able to downsize my meals after so many years of cooking for a large family so when I cook I usually get 3 to 4 meals for us in the freezer.

We love doing chicken burritos. Chicken breast and salsa, corn and black beans in a crock pot low for 8 hours. Shred your chicken and fill your burritos. I use a draining spoon to dip out the black beans and corn from the crock pot. We always top with cheese and sour cream if we have it, but will sub out for ranch if we are out. That mixture makes lots of left overs, so you can do burritos, taco salads, or nachos all in a week

Anyone hassling you about pre-preparing sandwiches simply doesn’t understand that the most effort for anything typically comes in the setup and pack down. If you can maximise the yield from each setup and pack down (therefore minimising prep overall), you’re simply being efficient. Awesome video thanks.

Our favorite burritos are chicken salsa burritos! I cook the chicken mixture in the crock pot as follows: 2-3 good size chicken breasts, 1 jar favorite salsa, 1 packet taco seasoning, 1 can corn, 1 can black beans, optional onion. Once it's just about done I add in 1 block cream cheese. Throw that in a tortilla with some of your favorite rice and some cheese! So good! We also have added that on a salad, loaded nachos, and burrito bowls.

Breakfast- eggs, onion sausage cheese, salsal
Lunch, bean cheese, hamburger, green chiles, or green bell peppers, onion.
Just depends on what family like. I like a lil Kick. My son 14 has Corhns disease and cant have spicy foods or too many breads, pasta, or dairy. So his would be lil beans, mean, salsa, lil cheese
Note on tortilla heat up slightly to help them roll better, and brown bubbly side out thats the flavored side of the tortilla.
Please dont let negativity knock you. Someone will always have something bad to say about what you're doing. No need to explain yourself. Youre a wonderful mom. Great wife. And you take great care of your family. You are just sharing what you do. If people dont like it then move on. Done criticize. This is how this woman is inspirational to other hard working on the go moms. Who are looking for ways to cut down on being in the kitchen. So we have more time to read a book with our kids.
