- Singapore Hakwer Culture - Fried Char Kway Teow Noodles might not be Singapore's national dish but "No. 18 Fried Kway Teow" stall sure dishes this well enoughto haves snaking queue througout their operating hours. Customers range from locals, old-timers and tourists all wanting to indulge in the falvourfull (wok hei) noodles packed with an abundance of eggs, pork lard, cockles and fish cakes (requet for Lup Cheong or Chinese Sausages for added flavour).
The stall has been relocated to its original Zion Riverside Food Centre after the long overdue renovation.
Give it a try and you would sure love it!

When I visited Sg, my friend brought me to hv this stall’s char Kueh teow, said even the PM ate there but it’s too sweet for me…might b better with less sweet black sauce…😂😂
I’ve only had this dish 3 times all in 1 day in Singapore, absolutely the most delicious thing on earth.
The uncle very polite and humble. He said in dialect: I hope you find my noodles suitable for your palette/taste.

I first went in Singapore in 1977. There were still car parks food after 6PM, then came Newton Circus, my last stay was in 2021 but I just run for an Hokkien Mee, or a Char Kway Teow, and I have learnt to do it at home, of course with my tools, but still, some of the greatest dishes on earth!
I first went to spore in 1975 yes i had the orchard rd car park fried kueh tiaw 👍
Still remember Hokkian char hae mee , kueh chap, teochew fish ball kueh tiaw soup , hae mee dry etc

Im 56 yrs old and i spent 25 yrs of my life in Singapura . I used to buy nasi lemak for 60 cents , small packet from changi village market
That’s right - just a short walk from Great World. There are now more stalls selling Nasi Lemak at Changi Village (each between $3:50-$5).
I lived in singapore in 1989 just after the recession and left in 2013 , im sure there are lots of stalls in changi village nowadays , but the nasi lemak served by a malay.family is very popular until the late 90s , i used to stay in loyang avenue from 1990 to 1995 . I missed it .

This is economic char koay teow.... after fried the koay teow left 2cm .... for char koay teow one times maximum u can fried two portion only... but the best is fried one by one ....
but honestly it looks delicious.... full of wok hei....
Penang cha Kwei tiau add some prawn meat, different taste, also very nice.
No need prawn meat. The normal Penang cha kueh taiu are very delicious too. Especially those in Penang.
Prawn meat makes the dish look a bit more expensive I don’t think it makes the dish tastes as what it is … you can omit it and still tastes the same except no prawns 😅😅

Each person taste bud is different. Like I don't think so. I love the one at Bedok South hawker centre, I don't patronise any more because the Q is very long and now expensive too.

Does anyone know what type of dark sweet sauce is used for this CKT?
This hawker they got it from their supplier in big container. Home use can buy Tiger brand sweet soya sauce. For popiah the brand is Fat Buddha. Malay uses those brand from Indonesia.
I think the sea hum sauce makes the fragrant smell and brings the taste to a different level otherwise they will just omit it …

Not the best of the lots, procedures is great, has the "wok hei" Flavours , freshly prepared ingredients of sausages, fish cakes or cockles , Chilli was fantastic , sweet black sauce & very charred & delightedly yummy, minus the lark please , a killers of many CKT lovers, did Uncle know that ?
I think in KL if you fry noodles like this you will get slapped. Trying to make porridge or what? Fire sooo small wahlao.

Does not suit me tastebuds. I visited twice this month first by myself then with a friend. We thinks it's just okay. I like the Amoy street one better but the old stallholder looks very weak. My friend likes the hill street stall in bedok. Everyone is different.

I cannot understand why they call it char kway teow and then they add yellow mee to the kway teow. Also whats up with adding the dark sweet sauce? The malaysian version of char kway teow in Penang is so much better than this. No yellow mee and dark sweet sauce to spoil the taste.
Singapore version. With noodle is more flavourful, try to cook this w or wo noodle u can tell the difference. I have tried Quite a few so call famous stalls in penang. Not that fantastic as well.
Marc Seah eat your Penang then. Different strokes for different folks. You hv a lot to learn. Even on social media.
