So I just made this, It was quite good but I would recommend these small changes. Four egg yolks instead of 6 and 115g of sugar instead of 150. It was a little to custard flavored and a bit too sweet compared to Haagen-Dazs (in my opinion at least).

Yeah. Same case with me. 6 egg yolks seems to be a bit much, it became too yellowish and very thick. I reduced the sugar to about 125g and it was still a bit too sweet.
No commercial ice cream comes close to Häagen-Dazs. None. Since the first time I tried it, I've never bought any other kind of ice cream.
I've had better from smaller domestic makers. But you're right, as far as commercially and internationally available ice cream goes Häagen-Dazs is king, Ben&Jerrys doesn't even come close in my opinion.
Agree . I've had better local ice cream but as far as mainstream commercial ice cream goes no other ice cream comes close! I can't stand ben and jerry's. Too sickly.

it does not have to be 30 minutes. its way too long and it’d be thick AF especially the heavy cream is 3 times than whole milk ratio. You should just simmer them right before boiling. If they are boiled, the fat globules of the dairy content starts to deteriorate. Simmer is to pasteurize them. That is all
no. bring it to the simmer then take off the heat and leave for 30 minutes DO NOT simmer it for 30 minutes.

yeah ... not ALL ..just the good ones. Its more expensive to make it with eggs as its a frozen custard FIRST, then added milk makes it into the BEST ice Cream
The ingredient list on the container says skim milk. This video just says to use milk, but I will make it with skim milk.
Skim concentrated milk is what I've read on packages, I believe that it is some sort of skim evaporated milk

there might be recipes for ice cream that uses healthy sugar or 'stevia' but häagen dazs prioritizes the texture of their ice cream. their ice cream is rather fluffy and smooth with no ice crystals, and to achieve that good texture you need to use the right amount and the right type of sugar for making ice cream. sure, you of course can use diet sugars but the texture won't be the same as normal ice cream. hope I helped!
No, it is not possible to do that. Sugar in ice cream is not just there for sweetening, it also lowers the freezing point of the mix and suppresses ice crystals growth. If you try to omit sugar to make your ice cream healthier, the ice cream will turn into a hard, unscoopable brick

Haagen Daz sells vanilla and vanilla bean, the latter does have ground vanilla beans in its ingredients.

Haagen dazs use to be the best Ice cream in the world. Until they changed the recipe. Its just too sweet now and tastes like any other brand.
What has happened to this ice-cream now? Cost reduction? It is so bad now, disappointment, will never buy this thing again
