  • Easy Quick & Tasty Chicken Chop Suey (Fiji Style)
    Ingredients:
    • 1 Kg Chicken Breast (Cut Into Strips)
    • 4 Celery Stocks ( Thinly Sliced)
    • 1/2 Cup Water
    • 2 Large onion Cut Into Chunks
    • 1 Bunch Of Bok Choy (wash and separate Leaves From The
    Stems & Thinly Slice The Stems & Cut Leaves Into 5 cm
    Pieces) OR (Pak Choy)
    • 4 Carrots Thinly Sliced (Or julienne)
    • 1 Red Capsicum Thinly Sliced
    • 4 Tbsp Of oil (Any Oil Of Your Choice)
    • 1 Tbsp Dark Soya Sauce
    • Salt To Taste
    • 2 Tbsp Cornflour
    • Ginger, Garlic & Chili Paste (8 Garlic cloves, 1 Small piece Ginger & Chili to taste)
    • 1 Tsp Chicken Seasoning (Or Chicken Stock Powder)
    • 1 Tbsp Oyster Sauce (Optional)
    • 1 Tsp Sesame Oil
    Method:
    1) Marinate your chicken by adding soya sauce and oyster sauce and give it a quick mix. Add half of the ginger, garlic and chili paste and mix it well. Cover with a plastic wrap and put it in the fridge to marinate for at least one hour or overnight if possible.
    2) To prepare the vegetables, first take the celery stalk, cut it in half and thinly slice it diagonally. With the celery leaves, cut them into small pieces. Take the onion, cut it in half, then into quarters and cut them into chunks. Take the bok choy stems, cut it in half and thinly slice it diagonally. With the bok choy leaves, cut it in half and cut them in 5 centimetre pieces. With the carrot, thinly slice them and cut the capsicum into thin strips.
    3) To make the chop suey, put a pot on medium heat, add both the oils and heat it.
    4) When the oil gets hot, add ginger, garlic and chili paste, give it a mix and cook it until you get a light brown colour.
    5) Add chicken, give it a good mix, put a lid on and cook it for 5 minutes stirring it regularly.
    6) After 5 minutes, add bok choy stems, onions, carrots, celery and capsicum. Give it a good mix, put a lid on and cook it for 5 minutes .
    7) After 5 minutes, add bok choy leaves, give it a mix , put a lid on and cook it for 3 minutes.
    8) After 3 minutes, mix cornflour and water together and add to the chop suey and mix it well.
    9) Taste your salt. Add salt according to your taste.
    10) Add either salt or chicken seasoning or chicken stock powder, mix it well and cook it for 1 minute without the lid.
    11) Turn the heat off and enjoy it with rice or noodles.

    I made this yesterday with shredded meat from chicken drumsticks, I also used the bone because it still had small amounts of meat. It was so tasty. Thank you for the recipe Anita. 😊

      Dear William, Chicken can make you very sick if not stored properly especially raw chicken. . If you put it in the fridge to marinate, you stop any bacteria from growing in the raw meat. Hope this was helpful. Regards Anita.
