For 10 years I've been shooting with the Sony A6---series cameras, and recently bought the A6700. Why this camera for me? I love the small size, sleek ergonomics, lightweight, and image quality of the a6700. I can fit the camera body and 4 lenses that go from 11mm to 525mm (full frame equivalent) in a SMALL tiny sling bag. Yes, ALL of this equipment! Most camera brands will produce equivalent high-quality images. Ultimately, it's personal preference.

Thank you. It would be fun to do some pixel peeping. I think Fujifilm X-Trans sensors tend to be sharper than other sensor designs so I wouldn't be surprised if the X-S20 is sharper. Also, its ability to turn off or turn down noise reduction should result in a sharper image, especially in under exposed areas in comparison to the a6700.

Did you know that the xs20 has a dual gain iso sensor feature in log just like the a6700
When using flog2 if switching to iso 3200 the noise will be reduced compared to iso 2000 also retaining the color fidelity
As for working with high iso log base
I always have a variable ND attached to my lens so I can retain the shutter and arpature settings
Meaning I can still shoot wide open with a Siriu T1.2 lens in day time

Not really dual base but has a dual gain iso
The difference is about 40% of noise and color shift gets cleaned up when the second gain kicks in
      Pretty handy feature
Surprised that Fujifilm doesn't advertise it nor mention it
It's like the xt3 and xt4 where people found out after six month by chance that the second gain iso kicks in on iso 2000 when using flog which cleans up the image super good
It was one of the reasons that made me leave Panasonic eco system and jump ship to Fuji ,that and the colors plus the 10bit internal recording
They make phenomenal hybrids though I kinda wish they would go with a full on video camera
Something maybe like the fx3 but with their amazing xh2s sensor
Fuji would kill it in this market specially with how that sensor renders film grain instead of noise like the other competitors

In cinema cameras, open gate is used to pair with anamorphic lenses. I don't love the a7IV for video, unless you really want full frame (bad rolling shutter, worse IBIS than a6700, overheating potential) and that Sony autofocus. If you can stretch to around $2500, I'd be looking at the Fujifilm X-H2S. Super fast sensor. 6K open gate. All the features I gushed over in this video regarding the X-S20, but just better. If you really want full frame, I'd seriously consider the Panasonic S5II or S5IIX. They have the video-first features that the Fujifilm cameras have (open gate, 6K, etc., plus a few more like shutter angle) plus a fan so overheating shouldn't be an issue ever.

I haven't paid much attention to the a7CII so I don't have much insight. It might be a bit dicey on the video side due to its small size so overheating could be an issue but I can't say for sure.
IBIS is no replacement for a gimbal. It's a very different look. IBIS is sill handheld where you can see the camera bouncing. A heavy-handed IBIS also looks fake IMO; you can see the sensor straining against the direction of the camera.
A gimbal gives the image a completely stable look like the camera is floating or gliding through space. The horizon stays level.
But you have less direct control of the camera with a gimbal. You have to anticipate the action whereas the connection between the camera and the operator is much more immediate when it's handheld.

Not to sound like a Sony shill, but for things that you want to automate and rely on autofocus (like a podcast), it's hard to beat Sony because the autofocus is so rock solid.
For me, Fujifilm is a much more hands on, take control, creative system whereas Sony just gets out of the way and allows you to focus on other things.
As for portrait photography, they're both solid. Image quality is very similar. I didn't try out the X-S20 photography features, so I don't really know if it has cool modes and features that may be appealing to you. Again, lenses are probably the more important consideration.

Sorry your video has an underlying background hiss in the audio when you're talking. Maybe you need a preamp for your microphone.

The a6700 has a very tiny crop in comparison to its full width in photo mode. I don’t know that the X-S20 has any crop in width in relation to its full sensor for video. Every hybrid camera is going to crop off the top and bottom of the sensor to record video in 16:9 or 17:9
