I can't wait to try this. I may add mushrooms too and cover with cheese at the end. Also may make a Greek version with lamb and oregano. Lydia have you tried that? Would you use feta then?
I make this all the time, but my secret it's that I add potatoes!! I boil them with the meat of the eggplant for 10' and then I add that to the pen with the meat and the veggies, I also use carrots instead of red bell pepper!

It looks great but I have a question:why have to be boiled eggs,and not fresh?after you mixed all the stuffing,the eggs are not to be seen.And I have to tell you that it's not healthy to mix meat and milk in the same dish,so instead of milk,you can soak the bred in water,and instead of cheese,you can wisk some eggs on the top to be crispy in the end,but otherwise the receipt is good,thank you!!!😊

I would try chicken stock or vegetable bouillon. Too much lemon will overpower
