Blue Cheese Salmon

  • This is a marvelous dish adapted by Andrew Zimmern called Blue Cheese Salmon. It is definitely a recipe that you MUST have in your repertoire. So easy & delicious. Ya Hurr Me!
    INGREDIENTS:
    |Sauce|
    1 Large Shallot or 2 Small Shallots
    3 Packages of Fresh Dill
    1 Lemon (Use 2 Tbsp juice and all of the zest)
    6 oz of Boar's Head Blue Cheese
    2 Tbsp of Dry White Wine
    |Fish|
    Kosher Salt
    White Pepper
    Unsalted Butter
    Bake fish at 450 degrees until the internal temp reaches 110 degrees. Remove from oven and add the sauce then return to oven. Broil on HI until the fish reaches an internal temp of 125-130 degrees and the cheese is spotty brown. And that's it!!!
