How to Make the Dark 'N Stormy - get it right

  • In today's video, I'll show you how to make the dark 'n stormy! This is the unofficial drink of Bermuda and the international boating and sailing community. Essentially, it's a rum highball. Only two ingredients are called for (with the optional lime garnish), but the rum is what makes this simple cocktail complicated. You can't just use any old rum. Legally, as of 1991, the dark 'n stormy has to be made with Gosling's Black Seal Rum or it must be called another name. Just the same, I wanted to make a variation using another rum including an allspice float. We can just say this is a rum buck (a buck is a base spirit mixed with ginger ale/beer and citrus). Either case, they'll both be delicious!

    1.5 oz. (45 ml) Gosling's Black Seal Rum
    4-5 oz. (120-150 ml) Barritt's Ginger Beer
    Lime wedge for garnish

    1.5 oz. (45 ml) Hamilton's 86 Demerara Rum
    1/2 oz. (15 ml) St. Elizabeth Allspice Dram (as a float)
    1/4 oz. (7.5 ml) Fresh lime juice
    4-5 oz. (120-150 ml) Bundaberg Ginger Beer

    So, as a guy who follows mostly all the tip drink youtubers, I've just come across yours, and its obviously very new. You got "it", your vids are fun, informative and different. We all know how to look up a recipe for a drink on Google, but its hiw the youtuber delivers it that keeps us coming back to watch a video on a drink we kniw hiw to make, and yours does that! I realize there will always be new drink makers ( i hate the term mixologist ) looking for recipes here, but your vids are going to bring repetitive viewers of people who follow 10 other channels. Vwry well done!

    In Bermuda, they normally stir lightly after pouring the rum. The swirl then resembles a tropical storm. Don’t stir enough to mix the rum too completely.

    The Aussie Bundaberg ginger beer is made by Bundaberg brewed drinks in Bundy. Bundaberg Distilling Company, best known for their sugar cane dark rum, sell a pre packaged drink consisting of bundy rum and bundy ginger beer and sell it as;
    Dark N Stormy.
    I first recall it being sold in Oz around the mid 1990's . and is mighty refreshing on a hot day

    I make mine with either the Goslings rum or Kraken dark rum. For the ginger beer though, I really prefer it with Reed's Extra Strong. It has A LOT of ginger flavor and just compliments/cuts the rum and lime. I squeeze a half lime into it. Done.

      I also make mine with Kraken Rum (I love Kraken!), mainly because its readily available here in Sweden. Goslins is usually only available to order to the store, which can take some time.
      The Ginger beer I am using is a canned "Ginger Beer Tonic Water" that is really tasty and dirt cheap at our local Lidl store. Compared to regular Tonic water this is more then half the price.

    I won a trip to Bermuda from Barritt's with my cocktail... Storm Warning! Same Dark 'n Stormy recipe but added 1oz of Domaine de Canton Ginger Liqueur. (a little less ginger beer to make room for the Ginger Liqueur).

    2.0 oz. (60 ml) Gosling's Black Seal Rum
    1 oz. (30 ml) Domaine De Canton Ginger Liqueur
    4 oz. (120 ml) Barritt's Ginger Beer
    Lime wedge for garnish
    In a tall glass filled with ice add 2 oz Gosling's Black Seal Rum, 1 oz Domaine de Canton Ginger Liqueur and top with Barritt's ginger Beer. Garnish with lime wedge.

    Sometimes I am out of rum and have to use Jack Daniel’s instead. Then I call the drink Stormy Daniel’s.
    A Brazilian who makes a divine Caipirinha taught me to avoid the pith of the lime because it contains bitter oils that ruin the drink. To remedy/compensate, you must add disproportionate amounts of cane sugar. If you instead leave the lime pith out of the drink, you don’t have to add sugar. This prevents near-death hangovers tomorrow.

    Best one of "those" that I've made was with old navy dark rum. A nice old navy strength 57%. It was the only cocktail I drank but I still felt it at the end.

    This is the best video I’ve seen online on how to make a proper dark n’ stormy
 exactly how it’s done in Bermuda ;) FYI it’s also not a dark n’ stormy if you don’t use the right ginger beer! No other ginger beer tastes the same. Good job!

    As a member of the tall ships community I will usually insist on Gosling's Black Seal but as ginger beer gets more expensive than the rum we have foud many alternatives. The one I value the most is Buffalo Rock Ginger Ale. Yes, ginger ale from Alabama that is, for many of us, as good or better than some ginger beers and is priced below the cost of cola. Try it and thanks for a great channel!

    Glad youmentioned the difference in ginger beers. We are tall ship sailors who consider this drink a tradition. One problem with the D & S is that the ginger beer is often more expensive than the rum. An amazingly inexpensive yet incredible alternative is Buffalo Rock Ginger Ale from Alabama. Great ginger for the price of Coca Cola.

    A Dark N Stormy is so much nicer with a better ginger beer like Fever Tree. If you like even more zip to your cocktail, try Q. Both are worth the extra price!

    Black Liver Project hasn't done this one so my understanding of the drink's background was more or less bar lore. I thought it was the Gosling's ginger beer that was required. Thanks for correcting my wayward understanding of the origins. I kind of want to research the falling out between Goslings and Barritt's

    I learned something new! My own variation is simple: 1.5 oz of Sailor Jerry's Spiced Rum, and fill with 4-5 ozs of Q Soda Ginger Beer (not very sweet, lots of ginger spice, and less sweet than Q Ginger Ale). Hold the lime (I personally don't like lime in this drink, but I'll explore your recipe.)

    Bundaberg ginger beer is made in Bundaberg, Queensland Australia, and is excellent. Bundaberg also make one of the best rums you will find anywhere.

    As a 21-yeae old new to alcohol, I prefer my "Partly Cloudy" which is made with Light Rum and a half ounce of Simple. It's a little sweeter and less spicy, but I like it more than the harsh peppery kick from a regular Dark 'N Stormy

    In Australia the dark n stormy isn't protected, we even have a major distillery (Bundaberg) which lists the cocktail made with their own rum.

    I am just making my first allspice drum at home and hope ot turns put good. No idea how the original tastes though. Ill definitly try it with the Lions Tale and you NONE Dark N Stormy and put them on my New Years Eve Menu.
    I suggest you call your version a Spice N Stormy.

    There is another not-Dark-N’-Stormy down under known as Dark & Stormy, so don’t use that label for your cocktails either. It is not a recipe and can only be purchased pre-mixed, a combination of Bundaberg Brewed Drinks Pty Ltd Bundaberg Ginger Beer and Bundaberg Distilling Company Pty Limited Bunderberg Original UP Rum. These two companies are not to be confused for one company despite both being located in the town of Bundaberg, Queensland, Australia. Also, before opening another bottle of Bundaberg Ginger Beer there is a “mandatory” instruction on the main (front) label that states “Invert bottle before opening” so this too is mandatory. It’s printed at the top of the main (front) label. There are also instructions on the rear label on how this bottle must be opened, but only after the bottle has been inverted, it’s very serious stuff. The opening method is also mandatory. I do very much agree that whichever version of this rum and ginger beer potion you have the addition of fresh lime juice really does enhance the drinking experience, and definitely do be very careful with the naming of said potion.     You won't believe, but i've found Gosling especially to try Dark'n stormy! Really hard to find in area i live. Really cheap and good for that cocktail!

    I loved the video. I also love old fashions and I like making my own old fashion syrup (water sugar and angostura bitters). I’ve seen some old fashion syrups with some spices in then and have tried some in mine. Would the allspice dram be a good addition to my old fashion syrup? And if so, in what proportion - not wanting to overpower the syrup too much.

      A little allspice dram can go a long way, so I'd probably start with a small amount of allspice dram like 1 part allspice dram to 4 or 5 parts syrup. You can always add more to make it to your liking. I think it's a great idea, Mark! Cheers!

    It would be possible to make an all-Bundaberg Dark ‘N Stormy knock-off, not sure if it’s available in the US at all, but Bundaberg produce quite a range of rums.
    It’s known colloquially as ‘Bundy’, ‘fighting juice’, among other names. A similar drink to a Dark ‘N Stormy is known as the Sugarcane Champagne, and is just Bundy with dry ginger ale and lime.

    As a big-time Angostura bitters lover, I present the Definitely not Dark N Stormy of my choice:
    Build it in a glass:
    - The juice of half a lime (I don't measure, it's typically about half an ounce(15 ml) anyhow;
    - 40-50ml (preference, really) Goslings Black Seal, in the glass, on top of the lime;
    - Fevertree Ginger beer to top up your rocks, highball, collins or any other 300-400 ml volume glass you use (I can typically fit the whole 200ml bottle, makes things easier imo) but do leave a bit of space;
    - Grab your small, 200 ml Angostura bitters bottle and cry internally about how they don't stock the big bottles in your local stores, and then proceed to top your NOT Dark N Stormy with about 10-12 dashes of Ango as a float. Garnish with a wheel of lime (dehydrated or fresh), or don't garnish, whatever.
    Fair warning, if Goslings rum seems intense to you as it is, it might be smart to skip the Ango float, or alternatively, you can do the Ango float but go for a lighter dark rum, I like the Regular Plantation Double Aged Dark. Drink yours as you like, at the end of the day, what matters is that you enjoy it - hope this version is useful. Cheers Anders, great video as always!

      Thanks, David! I really like an allspice float on this one because it pairs well with the ginger beer. Especially with a little citrus, it makes a nice full-flavored drink I could sip on all day.

    If you ware not a dark run fan, try Crabbies Original Alcoholic Ginger Beer over a shot of Captain Morgan Spiced rum. It's one and done in terms of driving, but a simple alternative. Don't forget the lime.
