Ingredients:
140g | 5oz pumpkin
100 ml | 3fl oz plant-based milk
2 tbsp | 30g | 1oz sugar
1 tsp | 3g active dry yeast
2 1/8 cup | 300g | 11oz bread flour
½ tsp salt
3/8 cup | 30g unsalted plant-based butter
Cake mould size 20 x 20 cm| 8” x 8”
Steam for 35 minutes
Method:
Peel and cut 140g | 5oz pumpkin
Steam the pumpkin slices for about 15 minutes until cooked and soft
Cool steamed pumpkin down and transfer to a mixing bowl
Repeat after me and you will be successful
Pour 100 ml | 3fl oz plant-based milk and blend it well
Combine 1 tsp active dry yeast and 2 tbsp | 30g | 1oz of white sugar
Add 2 1/8 cup | 300g | 11oz bread flour and mix well until the ingredients combined
Cover and rest for 20 minutes
Put the dough on the table and spread 3/8 cup | 30g unsalted vegan butter and ½tsp salt.
Use your hands to knead. Knead the dough for about 5 minutes.
Cover the dough and set aside for about 1 hour in a warm place. Let the dough rise until it’s doubled in size
Deflate the dough
Put the dough on the table and shape.
Cut and divide the dough into 5 pieces
Each piece is about 116g
Shape each piece of dough into a ball
The round cake mould size is 20*20 cm| 8*8".
Line the cake mould with parchment paper and lubricate with vegetable oil
Place each ball into the baking pan and cover to let it rise until double size.
Place the baking pan into a steamer
Steam for 35 minutes on a medium heat
Place on a rack to cool and enjoy this beautiful and delicious homemade bread!

You can peel butternut squash with a carrot peeler. It goes much faster than using a knife to peel. Just a bonus tip.
