I thought it was ground chicken livers an gizzards was used for Cajun dirty rice isn’t that more of a beef fried rice
You right, chicken livers and gizzard. But some people don't eat that. This is why they use ground beef or Italian sausage.
Many variations but yes, livers and gizzards are in the authentic version. I'm make some tomorrow with shrimp and andoullie sausage (cooked out the casing). I made gumbo this morning & keep some roux back to add to the 'dirty' part of the rice.

Exactly. They fucking up the recipe. Keep it traditional or call it something else but not dirty rice.

Heyyy, this dish looks great what’s the preferred white rice brand to use.
