Easy fruity chocolate cake

Fruity chocolate cake by Exquisite Deluxe Cakes
Ingredients
1/2 cup cooking oil
1 cup sugar
340ml fruit cocktail drain the syrup
3/4 cup boiling water
10ml Vanilla essence
10ml instant coffee granules
2 cups Cake flour
10ml baking power
5ml bicarbonate of soda
2ml salt
45ml cocoa powder
5 extra-large eggs
DIRECTIONS
1. Beat eggs and sugar in large mixing bowl with paddle attachment until light , fluffy and creamy not less tha 5 minutes.
2. In a separate bowl, sift together dry ingredients. Add to eggs and sugar , gently mix with a spatula until just combined.
3. In a separate bowl mix oil , vanilla essence, hot water and coffee granular then add to mixture and mix well. Don’t over mix. Then add fruit cocktail remember to drain the syrup .
4. Pour into two greased and floured 8" round cake pans.
5. Bake at 180 degrees until the middle springs back when touched, or a toothpick inserted in the center comes out clean (about 30 to 35 minutes). Remove from oven, pour sugar syrup for moisture and then turn out onto wire cooling racks and cool completely. Enjoy
Mix 1/3 cup chocolate chips and 1/4 cream the pour over the cake and enjoy. I enjoy cakes when still hot😂. It is even more delicious the following day
