Leftover Easter Eggs into Yummy Egg Salads

Donna’s Curry Egg Salad
3 hard boiled eggs
½ cup finely chopped celery
1 tablespoon chopped chives
1 teaspoon curry powder
2 teaspoons Dijon
1 tablespoon mayonnaise (more to taste)
Salt/pepper to taste
Diane’s Avocado Egg Salad
2 hard boiled eggs
1 medium avocado
1 tablespoon lime juice
1 tablespoon plain Greek yogurt
1 tablespoon chopped green onion (extra for garnish)
½ teaspoon salt
¼ teaspoon pepper
1 tablespoon fresh dill (additional for garnish)
1 ½ tablespoon minced shallots
Zest from one lemon
Mix above ingredients until smooth
Stir in 2 ounces minced smoked salmon
Serve with celery or cucumber slices
