Nah we not doing that basic brine, you can definitely kick that up a notch.Also panko crumbs is so 90's, we using crushed corn flakes and crushed potato chips now

Since the meat is not rinsed but patted dry, the little bit of sugar and salt can help seal in the juices and assist in the browning when using the air fryer. I’m personally used to doing hours and days for brining like for turkey, tongue,etc.
Recipe in description says "Transfer nuggets to clean bowl and gently toss to redistribute" before putting them back in the air fryer. Redistribute what? Also, am I literally just tossing them around in a bowl without anything else or is there more to it? Why not just flip them in the air fryer instead of taking them out?

3 tablespoons sugar
3 cups panko bread crumbs

Airfry at 400 12-15 minutes , turning halfway.

It's cut into smaller pieces, so it need less time for the brine to penetrate.
I had the same thought. I'm tempted to do a run of this with half brined and see if there's a meaningful difference.
