I have this issue where whenever I brake my car becomes so uneasy and often slides, even when braking in a straight line, any ideas?
Don't hold the break. Tap it repeatedly instead

So will I be ok to jump straight onto multiplayer or do I have to do the career mode first ?
you have to do the intro tour in single player, then you can go into mp :)
So I assume the number next to my name in multiplayer boards is driver level. The higher the number the lower the rank? I’m on the 2nd qualifier series race and have a blue #48 next to my name.
yep, thats your driver level :) You can find your skill and safety rating on the multiplayer main menu

What performe display did you select
I played on the recommended 4K 60, but also tried the RT mode and it looked stunning!
I just got the Z06 C8 to level 50. My only complaint is I don't have that kind of time to grind that much. I play where I can.
Level 25 unlocks everything
