  • It’s vegan week on wok from home + we’ve started with a classic! here’s steve’s vegan yasai yaki soba. plant-based paradise amai right? enjoy 🌱

    3 cloves garlic
    1 knob ginger
    75g firm tofu
    1/4 red pepper
    1/4 orange pepper
    a handful of shredded kale
    1/2 red onion
    4 asparagus spears
    1 leek
    2 mushrooms
    1 chilli
    1 spring onion
    handful of coriander
    1 packet of vegan soba noodles
    1 tbsp amai sauce
    1 tsp sriracha

    the sauce
    -
    6 tbsp caster sugar
    2 tbsp rice wine vinegar
    2 tbsp malt vinegar
    3 tbsp tomato ketchup
    4 tbsp tamarind concentrate
    2 tbsp light soy sauce
    2 tbsp dark soy sauce
    pinch of salt

    Thank you so so much for doing this series AND for doing a vegan week!! I was so happy when I learned this was happening! Would you ever consider showing us how to make Yasai Itame please? I miss it SOoOoOoOoOo much!!! My mouth is now watering. I have next to no fresh veg in the fridge and as we're in lockdown I've been trying to put off going shopping for a few more days but this has just swung it - I WILL have a Wagamamas tomorrow and it will be a pleasure to cook it!!! Thanks again - very much :)

    Thank you so much for all the efforts you (and your family!) put into filming these BEAUTIFUL dishes! Would love to see how you make Kare Burosu. I saw a video of you cooking it a couple of years ago on BOSH.TV and had to try it... fell in love with this ramen ever since ❤️

      Very good question, I just googled and they say you can do lime juice or rice wine vinegar with brown sugar (just fyi tamarind paste is easy to find in asian/Indian Pakistani shops)

      Japanese worcestershire sauce, it's more fruity and similar to a brown sauce but has it's own distinct flavour.

      I think it's a vertical bar, not an "I" - same as used in the video title: "wok from home epiode #3 | vegan yasai yaki soba". I just realised they spelt "episode" wrong!
