Behind the Scenes at Halter Ranch

  • Welcome to Halter Ranch in Paso Robles, Adelaida District. Today, we're taking a look behind the scenes at what goes into producing our estate farm-to-table meals, award-winning wines, and the upkeep of the grounds to welcome you on your next visit here.
    Le Jardin du Chef grows seasonal organic produce year-round for the farm to fork meals served at our on-site Restaurant. Haley Trengove, Estate Culinary Farmer, says, "The Chef's Garden must be watered, fertilized, and weeded on a daily/weekly basis. Tending to the fertility of our soil is crucial for all plants. I always put an inch thick layer of compost down when I'm going to plant in a new bed. Tending to this space with care and attention is a huge task but is incredibly rewarding."
    Part of our closed-loop agricultural practice at Halter Ranch involves some four-legged (show donkeys, sheep, or goats) and two-legged friends, too. It's always a busy morning in the chicken coop.
    Though the Halter Ranch Estate is over 2700 acres, only 180 of those are planted to vine. We produce award-winning wines ranging from a delicate and refreshing Grenache Blanc to a bold California Cabernet Sauvignon. Harvest has just finished, and the production crew is hard at work, steaming barrels in preparation for when the coming vintage is ready to be set away for a time. Before that, there is much to be done. The tanks for the state-of-the-art, multi-level gravity flow system must be filled. There is basket pressing to be done… all in a day's work in the winery!
    By the Victorian home, Landscape Gardener, Michael Picard takes the day to clean up after the rain we just received over the weekend. There's trimming and racking to be done.
