    • @peterspaltman
      @peterspaltman Před 4 lety +8

      @@absolutecheese820 first we need to look at the new profile we want. Easiest 2 forms to create from this is either a santoku or a french chef. With the santoku you need to grind the back of the blade towards the edge, for the french chef the edge goes up 70% and the spine 30%, adter that you need to regrind the bevels to re-establish a thin razorlike tip all without overheating the blade and ruining the temper and etch the blade if it is damascus. I have several beltgrinders and lots of different belts to get this done alot quicker than a wetstone.

Michigan has been hit extremely hard with the virus. That Sakimaru Takobiki(the big one that you said would look good on your wall) would get a lot of great use at the small family run sushi bar I work at. During the covid shutdown they have been making food for us employees to be able to eat every day. It would be great if I could repay them in some way. I am also an ABS apprentice bladesmith so I would love to take on the challenge of repairing any knife, no matter how broken, to either give to my bosses, coworkers, or family who have all been tremendously positive influences, and supporters in both my civilian and military careers. BTW I gave my mom the cheese size cutting board that used to be a piece of your table and she absolutely LOVES it.

    I’d love to repair the Shun Sora with the two inch broken tip. I love the kiritsuke design but I dislike the lack of height on the blade. I’d take this to the grind stone and change the spine profile to kiritsuke-like. Then changing the edge profile to have a steep belly in first third from the tip. I could transform that knife to fit my exact kitchen needs. Cheers Ryky and fans, rock on🤟

    • @chrisverbeke2335
      @chrisverbeke2335 Před 4 lety +3

      You would want to be careful with how much you change the edge profile because it is San Mai construction so the vg10 might not go all the through. You don't want to end up with soft stainless at the tip.
      Edit: I checked online and it appears the the vg10 core only goes to the top of the hamon line so it's safer to just bring the spine down to the edge.

My dad was a blacksmith, and as a kid,i watched him shaping steal with fire and hammers and make all sorts of stuff out of it, and when he did let me try, i became aware of how hard it is, how much strength it requires and how much skill goes into it. 50 years later, i am still in awe when i see so much skill poured in few inches of blade dedicated to preparing great food for nourishment and joy. Thank you so much for sharing your skill with all of us. I always respect the care you show even to the damaged knifes, it shows that you don't just see them as a consumer product to just throw away and get another one, but as something to be treasured, this really reverberates with me and how I grew up.
    My parents always teached me to take care of my things, if possible fix it and before throwing it away give it to somebody who needs it.
    So far I only own 3 cooking knifes and I hold them all dear, my first knife(a Zwilling chef) was gifted to me eight years ago by my father when I left home, he was also the one who teached me how to sharpen knifes when I grew up. My 2nd knife I bought myself it's a small petty knife from Fürsthof while losing sharpness rather quick I still like it and my last knife was gifted to me by a friend 3yrs ago who is a chef. The knife(a Zwilling but a Santoku) was one of his older work knifes that was heavy chipped specially on the tip, but I happily took it, while I looked for videos on how to repair the knife, and I stumbled on a channel of a young guy who made enthusiastic videos about knifes, how to repair and sharpen them, your video on how to restore a knife with a broken tip helped me greatly back then and since then I always find my way back to your channel and enjoying it.
    Since I am not well off and the pandemic biting me a bit deeper than comfortable, my dream on finally owning a japanese artisan knife are now in the far future, so I hope to take this chance and hope to soon own my fourth knife, if you already gave away all knifes I would be also very happy about a sharpening stone.
    Keep up the good work and I hope to be able to keep watching you for a long time, sorry for making you read such a wall of text, stay healthy.

    Ryky, just in case you don't see my other comment on your previous post, I also copied it here. I love your videos about whetstones and sharpening skills. That's what brought me to your channel. However, I'm now impressed by your generosity; it's not very usual for someone to decide to just give away knives! Most people would try to make some money from all that merchandise. Your generosity speaks volumes about your character. Thank you for being so great. So on to my request: I would love to give a Shun knife to my wife. Her parents immigrated to Arizona from Japan to start a Karate Dojo. Fast-forward a few decades, and she now works as a pediatric emergency doctor here in Phoenix, Arizona. This COVID pandemic has been challenging for her, her friends, and her medical department, but she is doing what she thinks is her calling and duty. It is what it is. At this time, I think a Shun knife would bring a smile to her face. She loves to cook (she is one of the best cooks I know), and she always "drools" over Shun knives whenever I shop around online. Here is a video that she made, along with her friends, to try to help with the pandemic (it's about washing hands; she is the only Asian doctor in that video! ;-) instagram.com/p/B_vZl1xBnmG/ Anyway, even if my wife does not get a knife, thank you for all that you do!

    Hi Ryky! It’s amazing that you have the heart to give a proper knife to those who love to cook or are in need and a passion for taking care of knives and teaching those who would like to learn. I myself am not in need of a knife since I’m capable of buying my own in some time and the last thing I’d like to do is take a knife of someone that can’t actually afford one at all. If you do have extras after giving to those in need I’ve been trying to buy a #2 steel Traditional Japanese chefs knife with an octagonal handle made of preferably ebony wood or cherry and possibly without a horn ferrule. Honestly anything would be amazing and I would just be grateful to have a free knife, cutting board, or whetstone since recently I have been trying to buy good materials to cook with. I don’t care if it’s is damaged or not because then I can learn to repair it. If not then still thank you for being such a selfless and informative content creator! It is truly amazing that you are providing for others when you can sell these knives or keep them for yourself. I hope you and your loved ones are safe during this time and please keep making great content to help those who love taking care of knives.

    Hi Ryky! I'm currently a student at UC Berkeley with a passion for cooking. I teach a cooking class for my fellow students to teach them how to make more financially responsible and healthy food choices since over 40% of our student population is food insecure. Despite being in quarantine, we continue to instruct our students through zoom. While I am food secure, I can't afford to invest in quality knives, especially now, being in quarantine AND amidst a move. I would be so incredibly grateful to receive any of these knives, but in particular, that kiritsuke with the emerald resin handle with the little bit of gold really caught my eye. It's so beautiful. Anyways, I hope you're doing well and that everyone is staying safe. Thanks so much for your videos and your generosity. It makes this quarantine so much more bearable :)

    The interesting take on the Kramer with the G10 would be a knife I would love to use and pass down to my kids or grand kids like my grandmother handed down to me. I have always had an obsession for blades and I would always admire her when she would hone or sharpen. She passed about 20 years ago and in her hospital bed she commented "well, I guess you're gonna get those knives a little sooner than we all had hoped". They have moved with me from California, to when I was stationed in WA, back to CA after I was retired from the Army, so now as far west in the USA on the island of Kauai HI. during this pandemic my two girls (3 and 8) have been cooking with my wife and I trying to keep sane in the most beautiful place on earth. I think what you are doing is wonderful. I started watching you after my mom got ripped off by buying knives online. They advertised a Damascus style knife with a price that was too good to be true. Of course it wasn’t true once it was delivered. Based on your videos I ordered some budget whet stones from amazon to show her that if she just took care of the Victorinox chef knife I got her it would still do the job. Fast forward to present day, I have sharpened every knife in her kitchen at least once. Thanks for introducing me to a wonderful hobby.

    Greetings Ryky
    I am still a Chef in a making and I love repairing knives and kitchen knives!
    I always go to Japanese surplus/thift stores hoping to find good quality kitchen knives for me to repair and bring it back to it's glory days, I kept doing this until it became a collection of mine in which I do use when I cook at home or at my culinary classes. One time I was able to get my hands on a Seki Magoroku Nakiri MOV4000 still in it's box at a surplus and back then I didn't know how sharp Japanese knives were and it amazed me so much when i did find out how sharp that knife was and that knife started my love for Japanese knives and whetstones!
    Your videos have taught me to effectively sharpen knives using whetstones. Time to time I would be able to find good whetstones at our near by Japanese surplus stores. They don't sell Japanese knives or whetstones where I live so that's why the only place where I can find them would be at surplus/thift shops.
    still continue to find rusted old kitchen knives and bring them back to life to be used again. I do this because the final product is pleasing to my eyes and I enjoy it very much seeing the before and after pictures I take of the knives I restore.
    Take care Ryky and your family.

Now that I'm old I'm working on my cooking skills more and the cooking blades are so beautiful. I don't know why but I never thought much of putting attention into the kitchen knives. It's always been about my hunting blades. I am really enjoying using a good quality blade in the kitchen now. Keep up the good work. I love the fact the you stress the care of these blades. It makes me sad when I'm visiting and try to help in the kitchen and find how poorly people treat their kitchen blades. I often volunteer to sharpen firiends kitchen knives but often hear no, a sharp knife scarys me. My goodness. That gets old. A dull knife scarys me and I just don't get people wanting to use one that has no edge.

I must say, I’ve been lulled to sleep many nights watching your full length sharpening videos. I’m also known to be in the kitchen quite often. However, I have absolutely zero good quality knives. I would LOVE to get ANY knife, i'm a US Army Vet and i've been trying desperately to find a hobby since getting out of the Army. Not trying to pity myself or anything, but i have struggled with Depression and PTSD since 2011 and i've lost all interest in the things i once loved to do. Then one say I stumbled across your channel and since then you have really gotten me into wanting to learn to sharpen and hone knifes . I have been practicing on sort of crappy knifes and kitchen knifes and i have attempted to buy a few whetstones and knifes here and there but i'm not really all that experienced or knowledgeable as of yet and have been attempting to use your videos as a sort of guide on what to buy. But i would absolutely love to have a BEAUTIFUL Japanese Knife, Broken or not. A broken one would really give me the opportunity to truly learn how to repair one and give me that satisfaction of "I DID THAT", and a new one would motivate me to work even harder at learning to sharpen in order to keep that beautiful knife in tip top shape. But regardless of all that, i would like Ryky to know that he has really helped me more then he knows. Knife sharpening has helped me to relax and to really just focus on the sharpening, to give me reprieve from all the stuff going on in the outside world. So for that i will be eternally grateful. Keep the great videos coming and i will be forever a subscriber.
