My whole house smells like Thanksgiving after making this. In this video, I show you how to make the keto version of a loaded baked potato. But we are using cauliflower instead of potatoes and we'll bake it in a casserole dish.

LOADED CAULIFLOWER CASSEROLE
Serves: 6
24 oz cauliflower florets
3 tablespoons butter, melted
1 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 cup heavy whipping cream
1/4 cup sour cream
2 cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
2 oz cream cheese, softened
1/4 cup sliced green onion
1️⃣ Preheat oven to 425 degrees. Add cauliflower florets to an 8x8 square baking dish. Toss in melted butter, salt, onion powder, garlic powder and black pepper. Roast at 425 degrees for 20 minutes or until cauliflower is fork tender.
2️⃣ In a medium bowl, combine remaining ingredients - heavy cream, sour cream, shredded cheddar cheese, crumbled bacon, cream cheese and green onion - and spread on top of roasted cauliflower.
3️⃣ Return to oven and continue baking for 8-10 minutes or until cheese is melted.

For those who want a texture that really resembles potatoes is radish! Roasting them removes the spicy flavor, and the texture is just like a potato minus the heavy carbs! It’s my go-to!!!
Hi Kathya, do you peel off the red skin before you roast them? Or do you leave it on? I would love to eat something that resembles a potato, so please reply!

Try A Daikon radish, if you can find them. They are white and usually very thick and long, like a parsnip, but mild. . Cube them into soups to replace diced potatoes. Amazing!
Hi, I used to use radishes a lot, not I use turnips and to me they are better alternative for potatoes and they make great fries.
I wasn't going to try a radish after trying a swede but you convinced me!

With it just me to cook keto for, I wasn't sure I would want to make something like this, but I'm glad I did! I took a pic but don't know how to show anybody. It was WONDERFUL, although I cut the bacon to only 3. I'll be eating off this for days!

Try mashing the cauliflower and adding some butter n parmesan cheese. On Low Carb Love's channels she makes lovely cauliflower mash n a cauliflower salad that's pretty close to a potato salad.

I made this recipe last night.I followed the directions and it did not taste at all like potatoes.The cauliflower was still crunchy and everybody could tell it was not mashed potatoes.The next time I'm going to "blanche" the cauliflower, mash it with a fork and then follow the rest of your recipe😉
The first time I saw cauliflower to replace potatoes was about 20 years ago on The South Beach Diet by Dr Arthur Agatston. I remember the first time I tried it, I was just so amazed! It’s come leaps an bounds since then!

I tried it back then and agree they were amazing. But I haven’t found any these days that’s any good. It may just me, I know my taste buds have changed. I still like them as mashed potatoes but as rice they make me gag.

Hi Annie, do you know if I can prepare this recipe and then freeze it to eat for Thanksgiving? I did see that if I were to put cauliflower in the freezer is recommended to be blanched first. Your thoughts?

I remember a recipe for low-carbohydrate Thanksgiving dressing based on cabbage. It was fairly tasty and… not entirely unlike dressing. Probably this is better?
Neisha Berry has a dressing recipe that is pretty much exactly the same taste as non keto dressing. It's amazing. You make a keto cornbread, then basically do the same as normal, non keto people. Search for the channel Neisha Loves It. She has a link to her blog there but it's also a video somewhere
Non-keto people absolutely can tell there's cauliflower being substituted for potato. If you just tell them straight up that it's cauliflower, you don't make them angry, or make them wonder what's wrong with your "potato" dish. Usually they think it's spoiled. Don't lie to people. Cauliflower is versatile and tastes amazing made this way. Just tell people it's loaded cauliflower and they'll eat it up, anyway.
I would never tell someone that it’s potatoes instead of cauliflower (unless I’m trying to get my kids to eat more vegetables 😄). That wasn’t the point. The point is that these recipes are so good that non-keto people can enjoy them too so it’s a great option to bring for the holidays where both (keto & non keto) can enjoy.

I like the wines from Secco Wine Club. All of their wines are like 1-2 carbs per glass. And if I buy something from the grocery store I get a Spanish wine called Campo Viejo Rioja.

Virtually all your dry red wines are relatively carb-friendly, with Pinot Noir being the lightest of the bunch at about 3.4g per 5 oz serving. Zinfandel, my personal fave, comes in around 4.2g per serving.

Unfortunately I’ve been having some inflammation due to lots of dairy products I’ve been eating since on low carb. This recipes looks amazing but I’ll have to pass. I’m more on an anti-inflammatory diet for now.
Yeah, I don’t even think dairy free cheese would be good in here. I was trying to think of a way to make it dairy free for my dairy free friends. 😄
Garlic is not in a loaded potato. Leave it out. Instead, add paprika, which works great with onion.
