A parrillada is a very popular dish across Latin cuisine. It’s a mixture of grilled meats, served on a huge plate with sides and IT. IS. AMAZING.
Almost every parrillada has at least three beef proteins. Today ours are center cut ribs/finger ribs, cross cut ribs (big tablitas), and fajitas. Chicken and sausage is also a must.
A parrillada basically means a bunch of grilled meats, served on a platon, for you and your family and friends to enjoy. Let’s get fired up, get these meats seasoned and start cooking!
I'm a Gringo from Texas, living in Mexico. We do this almost every weekend. Looks good Arnie, but we also include quesadillas, fresh salsas, Guacamole and we season and marinade all of our meats differently. Every bite of every one of the meats are a spectacular surprise. We also wrap onions in foil with lemon juice and butter then put them into the coals to cook. Oh soooo good. And yes, home made flour and corn tortillas!

I live in the Rio Grande Valley and I eat a LOT of Mexican food. And cook a lot of it too. Always working on recipes. I have recently started making my own tortillas with a tortilla press I welded up myself. Fresh tortillas are a game changer. Parrillada coming up! Thanks for the great content.

Hey ArnieTex that’s one thing I remember fondly of my time at Ft Hood, was the food whether it was barbecue or Mexican, Tex-Mex or Southwestern food because of the taste, I grew up in California and still live in California but Texas was a different, maybe it was the portions because they were huge and tasty. I was 17 and I’m 63 now and I can still remember the taste 😋😋

Brings back alot of memories. My father used to this every other week for the whole family when I was younger. In the Rio Grande Valley.
I've learned so much from your videos. Particularly love the South Texas flair. I'm in North Texas, but have since incorporated more mesquite, straightforward rub combinations, and overall a slightly hotter and faster way of doing stuff. Always with a bowl or three of your restaurant salsa. Wow. Two thumbs up, three if I had an extra digit.
I just found your videos yesterday. And it's such a Joy to watch someone with a Truckload of common sense when it comes to grilling. Life is not perfect, we have to learn to go with it as it comes to us.

I'm a chef in South Louisiana and over the years working in restaurants I've come to be dear friends with quite a few central and South American people. I always love hanging out with them for barbacoa and parrillada... Just a whole bunch of grilled meats and veggies, a bunch of different salsas and toppings to choose from and everybody digs in with some tortillas. Truly a family feast and some of the best food and company you could ask for
As a fellow chef, if it wasn't for Salvadorians, Guatemalan, and of course Mexicanos, the food service industry would collapse... 😂

Folks! Listen up. This. This right here was a brilliant lesson in fire management. Don’t miss that. A true pit master knows how to manage a fire & the temp of the food just by smell and texture. The flippity flip method. See how he used that chicken to raise the temp of that fire??? In the end nothing was burned and all meats were tender.

That looks delicious! Up here in Minnesota there probably are lots of people who knew this style of eating had a name,I never knew there was a name for that. I would do something similar and just call it grill day. I call up my friends and invite them over and I grill up usually about 50-75lbs and of various meats (chicken/sausage/pork chops being the most common). We drink beers, eat meat and all the various side dishes we bring to grill day. It's a good time, plus tons of leftovers. We'd do this a couple times a month until we all had families. Now I do it on a smaller scale for my family. My daughter is the most voracious eater of grill food and thinks anyone who doesn't think grill meat is the best is just stupid. I just tell her "you got that right...want another pork chop". Kids are the best. Thanks for sharing the video, love your style man.

Mr Arnie that parrillada is the mero wowie! I'd never seen the shaved chicken. I know in Rio bravo I got them to cut down chicken legs at Guajardo... I'm gonna be on the lookout for shaved chicken now. I've always wanted to grill ribs too. I'm from Mississippi and they always smoke them low and slow.
