The last thing you want to do is fill a check out with dye based ink but the signature of the check's owner in pigment based ink. Once washed the thief has the original signature and can change the rest of it for nefarious purposes. Use pigment based ink for the entire check.

All comparison videos I have seen compare uniball signo 207 to an old-style (and probably halfway dried up) Bic ballpoint pen, and only with respect to one property: ink-resistance to washing with acetone or related chemicals. What about other kinds of pens? What about waterproofness? (Uniball signo is not waterproof.) What about ability of a pen to make carbon copies (for checks with “duplication” paper attached) ?

As a analogy of the dye, imagine you have a bucket full of dark grey pebbles, but they're all covered in mud. Mud stuck to the pebbles, is like individual dye molecules stuck to the larger paper fibers. You can wash the mud away, because it can disperse into water without disassembling the pile of pebbles. The particles are small enough to easily slip back out from between the pebbles. Likewise, dye can disperse into solvent molecules, and be carried through and away from the forest of paper fibers. As a analogy of the pigment, imagine you have dark grey pebbles, and some bright red pebbles that are small enough to fit between the larger ones. You pour the red pebbles into the bucket, and most of them settle through the cracks between the larger grey ones. No amount of rinsing will separate them, because pebbles won't liquify in water. Unless you grab every pebble out one at a time, you're not separating them easily without removing everything into individual pieces. Likewise, removing pigment flakes from paper fibers, one at a time, would be nearly impossible without practically infinite time on your hands, and some nanomachines. Doing so would still destroy the paper as you'd have ripped it apart into microscopic pieces. Paper's actual structure is like laying a forest of random strings on top of each other and pressing it flat. The liquid the pigment ink is mixed with lets it easily flow and settle between these stringy layers of paper fibers, and get trapped between them, just like the smaller red pebbles fell through the cracks in the grey pebbles in the bucket. This is about the best I can explain it without some fancy 3D animations. This is also very close to how air flows through a air filter, and leaves dirt particles behind in the stringy forest of fibers. They just get stuck, but the air fits through.

Acetone can be found as an ingredient in a variety of consumer products ranging from cosmetics to processed and unprocessed foods. Acetone has been rated as a GRAS (Generally Recognized as Safe) substance when present in beverages, baked foods, desserts, and preserves at concentrations ranging from 5 to 8 mg/L. Additionally, a joint U.S-European study found that acetone's "health hazards are slight."
