Juliette was born in Brazil, grew up in Washington where she met Lionel, and they moved to Montreal, Quebec to start making chocolate. Juliette & Chocolat is a family-run & local Canadian business. All her products are handmade by Juliette herself and her pastry chefs. If you're looking for a cool place to visit in Montreal, definitely visit one of her many cafes (or more appropriately: chocolate bars ;-) ) and support local entrepreneurship. Want to learn more about? Hear her story ~
"As far back as I can remember, I always thought chocolate was magical! It’s the sweet pleasure that I dreamt about, that introduced me to cooking, and that gave me so many sweet memories. Even after becoming an adult, I kept eating as much, if not more, chocolate, and kept dreaming about it. So after finishing my studies in Montreal, I decided I had to follow my sweet tooth, and open the restaurant I was dreaming of. A place where chocolate would be king, where you could get simple, generous desserts to make kids and adults swoon!"
"And so in 2003, when I was 22, I opened the first chocolate bar in Quebec! Finding the right name was a challenge, until my sister had an inspiration everyone loved: Juliette & Chocolat! On the menu, all the desserts I dreamt of as a little girl, but also chocolate dishes and drinks to showcase this magical ingredient and travel its origins and flavors. Thirteen years and a lot of work later, Juliette & Chocolat has grown a lot, and so have I. I’m incredibly grateful and lucky to be working with a team that’s incredibly passionate, creative and sweet! Our mission is still the same: share sweet moments!"
"I’m in my restaurants every day, so if you see me please introduce yourself, I’d love to meet you! And until then, I wish you a happy, chocolatey life!" - Juliette, Source: julietteetchocolat.com

I'm supposed to be studying for a test and instead I'm watching a lady make cheese and mice out of marshmallow
AYEME do you regret it?
Ur priorities are good
+Rachelle Mezack not at all. now i know how to make marshmallow cheese and mice
AYEME DUDE IM NOT EVEN KIDDING I HAVE TO STUDY FOR A TEST TOO.
AYEME don't forget the chocolate
When I read the title I initially thought it was marshmallows dipped in cheese, I was a little skeptical so I ended up watching the video. This video was very creative and the finished product looks fantastic.
Anderson Rodriguez Same!
same
i love how candid this video is :) makes it more interesting when the chef actually encounters mishaps here and there 👍👍👍
You should see me in my kitchen! Mishaps are my specialty ;)
Juliette Brun you should totally make your own videos! I love your personality :)
Cat Cat right! i will sub. ;)
Juliette Brun I would watch videos if you made them
SarahBevElizabeth
Same…
I don't like marshmallows but this was so wonderful to watch.
Try fresh ones. Changed our minds forever. Thanks for watching :)
Thanks :)
Mage in Black I hate marshmallows too but it's so cool watching cooking videos XD
Mage in Black Yeah I agree
adelle
Chef Juliette is so sweet and bubbly. It makes a person want to go to Canada just to meet her and try her tasty-looking treats.
Thank you so much!!!! :)
Yesssss come to canadaaaa maple 🍁 syrup galore
DarkSpiritMorrigan where is her store?
Sare it's in montreal
DarkSpiritMorrigan ikr
Chef: Let's make the mice *cuts to luscious chocolate spinning* Me: NO ONE HAS A MAGICAL CHOCOLATE FACTORY BEHIND THIER KITCHEN
Apparently she has
@@flithyactsataresonablepric2230 thats mean
Hiro Gamer01o It's a freaking joke. 😑 Willy Wonka has tons of chocolate, she has lots of chocolate too, that's why she/he said that.
Right? She’s so hands on explaining the rest but the first step of the mice she is so vague on lmao
haha at first when i read the title i thought it was gonna be marshmallows and chocolate mice and then cheese. i was pretty confused until i watched the intro 😅😂
me too i was like that sounds gross im gonna watch.
hahahah!!! yeeees!! my people!! rofl!! I was disgusted, confused and intrigued.hahahah lol
HisNeverland same, i was so confused like that sounds horrible.
It's actually marshmallows & chocolate made out of mice mixed with cheese.
Stereokroma bahahahaah!!! That's EVEN BETTER!!😂😂😂😄😄😄
The smell when you enter in a Juliette & Chocolat store is pure heaven! The smell of chocolate, the hot chocolate mixing, soooo good!
…I feel like I was better off not knowing.
Welp, time to look for a chocolate scented spray.
true but they wear these incredibly stupid red hats and i feel bad for the staff.
She says everything with an American accent except marshmallow. :-)
Hahaha, that's too funny. I will practise my accent on "marshmallows" then ;)
Juliette Brun Great video though!
Thanks so much! It was really fun to make! Loved the Stereokroma team!
Isaiah Higgins im Canadian and pronounce it marsh mellow ... but im 1 hr to the us border
Isaiah Higgins She has a Ontario/Quebecois Canadian accent... we aren't incredibly different sounding from Midwest Americans.
THE WAY THE MARSHMALLOW POURED INTO THE PAN WAS SO SATISFYING OMG
Totally agree :)
a pet named steve H💿L📀!
i've been to montreal once, and while there i went to this restaurant... and then two years later i randomly stumble upon this video!!! bwahah i love it and i can't wait to go back for some hot chocolate
This is actually the first place we went to when we first moved here 5 years ago :)
Can't wait to try this, luckily I have a chocolate river in my house too
"That's a male" LOL XD
Yes, the successful ones are MTF's in all walks of life. Male to Female and some are FTM's harder to spot. The males have flat backs MTF's and the FTM's have curved backs like a woman does. They are not transgendered always. We are finding all famous people on tv are androgynes, hard to explain, but they are the opposite sex of what they portray.
Your transgenders have a sex change, most of these people do not.
They are taking over the whole world. All positions of authority are these androgynes. We have them as judge and district attorney in our town.
It is getting the end of the age.
cooking is so troublesome... but watching people cook isnt
I don't need kids to finish the bowl. I'll empty it myself. 😂
I would never do this at home but I like watching lol
so that's how you make spiky eyed mice!!!
Hahaha, sure is ;)
wow, that's amazing!!! You are so very talented, creative. May I ask why cornstarch? I always thought powdered sugar was used?
Cindy Bowes I have seen a 1:1 ratio of cornstarch and sugar used as well. I think the key is a tasteless or sweet powered.
Anissa Alexander Thank you for your response. I was curious as I have seen cornstarch used in moulds (like cream eggs) as well! :)
Cindy Bowes Cornstarch is cheaper. It would taste kinda weird to bite into it normally but this is coated in chocolate so you never get that first taste of cornstarch before you start chewing.
Sure enough, obviously it is to cover up the stickiness so the object (in this case marshmallow) is easier to handle. Thank you For your response. : )
You could use either cornstarch or a mix of powdered sugar and cornstarch (1 for 1) but using just powdered sugar would make the marshmallow much more sticky. The cornstarch helps absorb humidity whereas powdered sugar melts in contact with humidity. I personally use only cornstarch cause it's dipped in chocolate and it's less of a hassle when there's some leftover :)
Another great one! That'll be worth a visit next time I come up to Montreal :)
Let me know if you do :)
Juliette Brun You should consider making more videos on your own channel! Then open a store in Red Deer! ;-)
Jackman Works i
Wow! So much work but she made it seem effortless! I don’t know why, but this video was incredibly relaxing to watch. What a soothing, natural voice. Juliettte is a natural born teacher. She obviously has a great love for her work. I don’t think I heard one single “um” or “er”. That natural way of speaking comes when you have a real love for what you do. She is a lucky woman to have found her passion in life.
The title's wording confused me. I thought she was going to use chocolate mice and cheese to make marshmallows. I was like "what's chocolate mice?"
KySempai oh chocolate mice are a thing! we have them in Ireland, they're pink and white chocolate
I thought she was making mice out of marshmallow, cheese and chocolate....it sounded disgusting.
I've been subscribed to Stereokroma for a while now, but I just started working as a chocolatier a few weeks ago, so this was especially cool to watch for me! :)
Thanks for subscribing. :)
Really love this lady. She seems so much more relateable than normal professional chefs 🙂
Am I the only one who didn't know there was " sheet gelatine" ?
Rain Bun Unicorn me I was totally unaware
Rain Bun Unicorn It's called leaf gelatine in the UK.
Rain Bun Unicorn at first i thought she said sheep gelatin.....
Rain Bun Unicorn I've never heard of that. I'm pretty sure neither have my parents.
really? we always use sheet gelatine here in germany 😯😃
Love your personality, you seem like such a fun person :)
Thank you so much! So sweet of you to say :)
I would put the little leftover marshmallows from the cheese hole cutouts in the mice. great video!
I like her candidness! Makes it fun to even be baking pastries at home
I think I liked this cuz unlike other cooking things she didn't just cut out all her mistakes to make it look perfect, the mistakes were even kinda funny to me lol
Her laugh is so infectious I love it
Wonderful tutorial and I love your sense of humour and delightful laugh. Thank you for sharing your brilliant creations.
Thank you so much :) it was such a pleasure to film!
😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍😍👍I really want to make this now!!!!! I’m a kid chef and I am self taught. I am always constantly watching and observing my family members when they cook, bake, or create any food!
For some reason, it's really satisfying when she dabs the marshmallow with corn starch at 8:32
The noise is just satisfying!
now, we're just gonna make the chocolate mice *grabs an industrial chocolate mixer* lol
loved it tho
I love the humor in you! Its makes it fun to watch! 😊
thanks :)
it's so jiggly OMG and her smile is full of happiness I knew it

Why haven't I discovered this channel sooner!
You can tell she loves her craft. This was so cool to watch!
5:52 so true it looks amazing
I thought the yellow chocolate is real cheese😂
Jaqueline Namjoon grammar? I thought the yellow cheese is real cheese? Or I thought the yellow cheese *was* real cheese.
Jaqueline Namjoon BTS fan?!

Rose_ramone maybe english is not her/his first language
I love your personality and of course this recipe 🍫
Thank you so much :)
I have no idea why but I have been consistently recommended this video for literally months now
I love her, she's a lot of fun 👌🏻😊
So much fun!
So glad you liked it :)
I'm so glad this was recommended to me
OH WOW! what a beautiful and radiant personality you have. I can feel the creativity in your soul, and the inspiration behind your eyes!
This was a wonderful tutorial, I just regret her not cutting one to show the inside consistency of the marshmallow after it dried completely. Thank you for the recipe!!!
Such a cute idea! Loved the video, wish I was not a continent away from Montreal!
Yeah, let me just go ahead and make my own chocolate eggs with my huge industrial chocolate mixer here.
I love the big lump of marshmallow, so cute
You're like a breath of fresh air! Simply amazing
Thank you so much :)
I would love to try this with my children. I am in the US and just want to make sure; can I convert the measurements from metric to standard without a problem? I notice she uses a weight measurement instead of volume for liquids - that has me a little confused about the translation.
You can use an inexpensive food scale for the measurements, or as @JulietteBrun says below: 1gram = 1ml, and the US 1 cup measurement is generally rounded to being 235ml for example. Hope that helps. Maybe Juliette will reappear later and add her insight.
So fun to do it with the kids if you don't mind the mess! I highly recommend it! I always use my scale for my recipes cause it's so much more precise, but you can certainly convert the measurements to standard! Let me know if you end up doing it with the kids!
Je sais pas si c'est bon, mais c'est joli!
Merci :)
Olivier Nicole ommelette du fromage

You can make them solid or fill them with something in your version. There's no rules.
Stereokroma okay then, it was a good video btw and I found the sheet gelatin amazing I've never seen that

The chocolate is so relaxing
Dang that looks unhealthy

this is such a fun video, but it's like watching gordon ramsay's cooking videos, where only about a quarter of what theyre using is actually accessible to you. I still enjoy them tho
Just amazing, I realy love this
Thanks :)
She has a very nice personality and presence about her. Very nicely done.

I like how she is not all that
This is the video that inspired to make marshmallows for the first time many years ago! Fairly easy to make and well worth the effort! I love this video so much and I'm so glad it popped up in my recommended once so I could recall that. :)
I LOVE this place. Everyone should go.
Wow thank you so much for that wonderful comment! so nice of you!!! :)
Can't you just melt marshmallows instead
Probably, but homemade marshmallow is delicious. :)
ringa Heart you can but they can set really quickly and are hard to work with.
+ringa Heart Fresh marshmallows taste so much nicer than stale old ones from the grocery store ;)
I agree with @stereokroma, once you've tried homemade, it's hard to go back to the storebought :)
ringa Heart If I had marshmallows I would just eat them straight
