    Recipe
    Makes 36 to 48 candies
    Ingredients
    1 ½ cups (250 g) granulated sugar
    ¼ cup (60 g) packed dark brown sugar
    1 cup (250 mL) evaporated milk
    ½ cup (125 mL) whipping cream
    ½ vanilla bean
    2/3 cup (200 g) white corn syrup
    1 Tbsp (15 g) unsalted butter
    ½ tsp (2.5 g) fine sea salt
    1 ½ tsp (5 g) flaked sea salt
    Directions
    1. Grease and line an 8-inch (20 cm) square pan with parchment paper on the bottom and sides.
    2. Place the granulated sugar, brown sugar, evaporated milk, cream and the scraped seeds from the vanilla bean into a large saucepan. Have the corn syrup, butter and fine sea salt measured and nearby.
    3. Bring the sugar mixture up to a boil on medium high heat while whisking. Switch to a long-handled spatula or wooden spoon (the caramel steams a great deal as it cooks). Once a full boil is reached, add the corn syrup and stir in and continue to stirring constantly while cooking on medium-high, until the mixture registers 242 F (116 C) on a candy thermometer, 8 to 10 minutes - the mixture will be a pale peanut butter colour (it will continue to darken as it sets). Remove the pan from the heat and quickly stir in the butter and salt and then pour this into the prepared pan. Sprinkle the surface with flaked sea salt and leave this to cool on a cooling rack for at least 4 hours (it takes a while to set.)
    4. Before cutting the caramels, chill the pan for about 90 minutes - this will make it easier to slice the caramels precisely. Once cut into squares, the caramels are best stored in a single layer on parchment in an airtight container.
    The caramels will keep for up to 2 weeks.

    I made these exactly according to the recipe and I’m happy to report they turned out GREAT! I’d never made caramels before and found it to be VERY easy. Go on and make these! You can totally do it 👍🏼. The only thing I totally disagree with is at 03:55 “you don’t want to store caramels in the refrigerator because the sugar will melt and it will turn into a puddle of caramel ” ??? Um, no, unless we are living in different universes with different laws of physics the sugar will NOT melt if you keep them cool in the fridge. I’ve been keeping mine in the fridge and I bring out pieces when I want some. No melting or puddle of caramel has occurred. So confused why she would say sugar will solidify at a warmer temperature and liquify at a cooler temperature. That’s not how the thermodynamics of sugar works! Regardless , I’m not going to hold it against her or the recipe. I liked the tutorial and the caramels were excellent.

    Just 2 questions
    1)Won't the sugar crystallize if I didn't add the corn syrup in the beginning and kept stirring. Some people say that stirring all the time will expose the sugar to crystallization.
    2)Another thing. We don't have dark brown sugar here in Egypt. We just have the light one. Is it okay to use it instead?

    Is that your own recipes akak Anna?! Because it quite similar with ours traditional dessert here in Malaysia. the differences just we coated the body of it with salt coconut. It called “Kuih kaswi” .

    Im new to baking .b 63 now .very health conscience .do have my cheat days and like to bake .Question..if recipe say 1.5 cup sugar .etc.. if i cut say any sugar by say 30 pct .how eould that effect time n taste.

      If you cut the sugar by 30% then you should cut the other ingredients by 30% as well. In the case of this recipe you are cooking until a certain temperature is reached, so timing is less of an issue.

    Talking about caramel... I once tried making the caramel for the caramel pudding dessert and i accidently burnt my hand. Thankfully it's not my dominant hand and now i'm just scared to do anything related to caramel but this look delicious omg..
