The Difference Between Caramel and Butterscotch + How To Use Each for the Base of a Pumpkin Pie

- Caramel Pumpkin Pie (yield: 1 9-inch pie)
Crust:
8 oz (227g) shortbread cookies, ground fine
2-4 oz (57-113g) butter, melted
1/4 tsp fine salt
1. Mix 2 oz of the butter into the cookies and check the consistency by squeezing the crumbs in your hands. They should pack together but easily break apart. If necessary, add more butter.
2. Press the cookie crumbs into the bottom and sides of a 9-inch pie pan.
3. Bake at 325F (160C) for 15 minutes.
Filling:
1 c (200g) sugar
3/4 c (170g) heavy cream
3/4 c (170g) whole milk
1 tsp vanilla extract
15 oz (425g) pumpkin puree
3 eggs
1.5 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1. Add the half the sugar to a pot set over medium heat. Stir so the sugar cooks evenly and when mostly melted, add the second half and continue cooking.
2. While the sugar cooks, heat the heavy cream until it comes just below a boil.
3. Once the caramel is an amber color, turn off the heat and slowly add the heavy cream.
4. Let cool for 10 minutes before mixing in the whole milk and vanilla.
5. Let cool for another 5 minutes and then add the remaining ingredients.
6. Pour into the prepared crust and bake at 325F (160C) for 35-40 minutes or until the center of the pie wobbles slightly but the outside is set.
7. Let cool at room temperature for 20 minutes and then in the fridge for at least 2 hours.
8. Optionally, sprinkle extra sugar on top and brulee right before serving.

1. Cook the dark brown sugar, butter, and heavy cream until it comes to a boil. Continue cooking for 5 minutes on medium and then remove from the heat.
2. Let cool for 10 minutes before mixing in the whole milk and vanilla.
3. Let cool for another 5 minutes and then add the remaining ingredients.
4. Pour into the prepared crust and bake at 325F (160C) for 35-40 minutes or until the center of the pie wobbles slightly but the outside is set.
5. Let cool at room temperature for 20 minutes and then in the fridge for at least 2 hours.
Holy crap that second one looks amazing! I’ve always been indifferent towards pumpkin pie because most I’ve had are just plain puree, but these seem awesome!

@@farelimmI don't live in the south but I agree. My pumpkin pies are full of fresh spices and definitely not just pureed pumpkin, lol! At family Thanksgivings and Christmas gatherings it was usually two of us that brought pies and mine always got eaten while my sister-in-law's barely were touched until she finally asked me to give her my recipe.

HOT TIP! Try to use real fresh ginger instead of powdered ginger! The flavor comes out wonderfully without taking over ^^ I grate the same volume of ginger the recipe asks for, then freeze whatever's left over.

I love using fresh ginger for baked goods! I once brought my husband's leftover birthday cake to a gathering, and heard after that someone who was 70 and well-traveled (and well-dined) said it was the best cake he ever had. I think half the reason was white chocolate cream cheese buttercream, but the other half was probably because the filling of the cake was a pastry cream made with fresh ginger (and fresh berries). I also accidentally managed to recreate a centenarian's beloved childhood ginger cookie that he'd been looking for for decades and I'm betting the difference there was also fresh ginger. I wasn't even trying to, I was just trying to make Christmas cookies and decided on a whim to add fresh ginger to the ginger snaps recipe I found online

@@spacenaves I don't remember too specifically, but for the cake it was a spice cake - I think I probably did a yellow butter cake and added a bunch of spices too it? Filling would be a creme pate - dunno what specific recipe I used, but after it cooled I probably mixed in ginger paste (the sort you can get in the produce section of the grocery store - it'll be less stringy than doing it yourself), then layered in chunks of fresh raspberries and blackberries while building the layers of the cake. The frosting is the white chocolate cream cheese frosting from The Cake Bible by Rose Levy Beranbaum! I know this because it is my absolute favorite frosting lol.
As for the cookies, I think it's called Grandma's Ginger Snap Cookies or something like that and is possibly the most rated ginger snap recipe on Allrecipes. It's from the turn of the 20th century. Only changes I made were swapping out the egg (I have a vegan family member) and adding a tablespoon of fresh ginger in addition to the ground ginger

All the sugar is from sweetened condensed milk and then the flavoring is canned pumpkin pure, the 'pie filling' can is cheaper and is just still 100% pumpkin as well.
