I don’t know where to begin. First off I’m going to wear hawian shirts when I fabricate from now on. Looked shard making a better hanger than the 60$ one. I was laughing so hard how you made an amazing hanger. I’d hold on to that puppy. Crud you could sell them. That was amazing work. Then let’s talk about the ability you have to cook over fire. Wow. Nice looking bird! Great MacGyver- engineering! I'll be hanging my turkey tomorrow in my Pit Barrel Cooker. I hope my turkey turns out as good looking as yours did. Happy holidays from Las Vegas, NV. Oh btw, I know it seems counterintuitive, but, if you hang with the breast side down the natural juices will drip into the breast almost like basting from the inside. The end results are juicier white meat. You should give it a try next time you hang any poultry =)

I will try to be brief… but it’s going to be hard! 😂 When I ordered my smoker, one of the options available was a Warming Oven over the fire box. Since it is over the fire box, I’d have to give up the griddle. I didn’t want to do that because I knew I’d be wanting to use the griddle as a stove top as I’m smoking. Also, this configuration provides one 5” smoke stack on the far end. I wanted two stacks. The optional Vertical Cook Chamber comes with two 5” stacks. Overkill maybe… but that’s what I wanted… and I just think it looks cool too! I’ve posted videos where I hung chickens in the fire box (“Chicken on the Lone Star Grillz v.1.0”), and, a follow up video where I hung chickens in the vertical (“Chicken on the Lone Star Grillz v.2.0”). Both were fun cooks. Now… the reason for all this (and to finally answer your question). One day I was talking with Phil (of Phil N Florence: czcams.com/channels/37sumA6yjPraqZpPM8U4dg.html ) about the pros & cons of cooking over open flame. He really liked his Webber Smoky Mountain and Pit Barrel Cooker. He suggested and encouraged me many times (and bugged me a lot) that I should build a small fire in the vertical chamber and try to replicate the barrel style cooks. Needless to say, I was more than a little hesitant. Well I’m glad I listened and let him persuade me! It is a fun way to cook and just shows how versatile the old LSG can be. I don’t have a very big backyard, so now I’m not tempted to buy additional smokers… not when the Lone Star Grillz can do the job just fine… I appreciate you watching my stuff, Jeff. Cheers… 🍻🍻🍻

Great vid. Love the idea of using the long handled skimmer as a turkey hanger. I know you were simulating a pit barrel smoker but was happy to see you add the water pan. I rarely do turkey anymore without a water pan. Two reasons, it really helps keep the bird moist and the gravy you make from those wonderful drippings are out of this world. Please , please, please tell me you made gravy with those drippings. 😋 Anyway bird looked great, have a great week. Take care of yourself and be safe. 👍🦃🍻

I’m going to have to come up with a bigger fire basket so I can spread out the heat and keep the flame in check. I didn’t want to have to use a pan, but it was the only way to get a decent outcome.
