I took a pottery class in college and its amazing how similar the base techniques are! Like, with pottery to attach a piece you score, wet, you may put a little "mud", attach piece, and smooth transition. Every time i see him do those steps I'm reminded how he isnt just a great chocolatier but also sculptor and painter!
I love the remoras! They're weird little fish with a sucker on their heads that they use to attach themselves to sharks. It's worth noting that these fish would be upside-down when they suction to the top of the shark.

One question: what do you do with the chocolate once you finish it? And if you sell it or something if that sort what do people do with it afterwards? Because well it’s too much chocolate to eat and I would be very sad of eating something so perfect. Just what do people do with it afterwards

The color matching and shading is excellent! I wonder if he has a fine arts degree or is self-taught?
I've learned so much from this and I'm doing my own very simply chocolate decorations using these techniques, especially the "glueing" of slabs.
