You did a great job with the flan. I am Mexican, and I am gonna write down a super easy recipe with some tips that will help you to get a beautiful result.
Traditional Mexican flan recipe doesn’t have cream cheese in it. You can add cream cheese, but the flavor changes drastically to kind of cheesecake instead of flan. This recipe doesn’t have cheesecake, so you will have a more traditional Mexican flan.
Ingredients:
1 cup of sugar
6 large eggs
500 mL or about 2 cups of whole milk
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 tablespoon of vanilla extract
Instructions:
Preheat the oven at 350 F
Make the caramel. In your video you are doing the dry method to do caramel, so just put the sugar in the pan and do not stir. When you start to see that the sugar is dissolving, you can move your pan , so everything starts to dissolve. I am not sure due to the light but in the video looks like the caramel is way to cooked, the color should be light brown because if it is overcooked, it will affect your recipe. After your caramel is done, then you pour it in your mold (use same size molds. A big mistake in your video is that you used different sizes molds, and that means different times to cook.) Let you caramel dry.
Blend together, eggs, milk, sweetened milk, evaporated milk and vanilla extract, you should blend maybe only 30 seconds, it doesn’t take that long. Once everything is well blended, you’ll see some foam because you blended it. Take the foam out with a spoon and then pour your mix into your molds ( I do not recommend thin molds).
Then you want to do the steam method like you did in your video, but put enough water to cover half of the molds. You want to cover with foil the molds or the mold where you put the molds, so the top doesn’t get to dry when cooking in the oven. The time varies according to your mold size , so you want to take them out when you still see some jiggle in the middle.

Chocolate cake mix follow instructions on the box as usual once you have your flan liquid in the pan add cake mix over top!

I'm 76 and was raised in Madison Wisconsin. When I was only 3-8 yo our neighbor owned The Spudnut Shop - a favorite of so many including the college kids from UW. Our neighbor would bring home the spudnuts that didn't sell and the neighborhood kids gathered around his truck to help him get rid of those 'day old' spudnuts. Nothing quite like them, especially on a cold winter day! I've never seen them sold anywhere since I've grown up and you brought back some great memories. Flan is one of my favorites and your cake looked so beautiful. Really appreciate your cooking AND the recipes. Thank you so much.

I had about 6 leftover donuts that went stale, and I used them to make bread pudding. To say it was good is an understatement.

I clearly have very different taste than you - it’s not dessert unless it has chocolate. BUT, that pumpkin Bundt cake looked amazing!

We do the flan in Brazil. We don't use cream cheese. 3 eggs, 3/4 can of sweet condensed milk , 1 can of whole milk, vanilla. Mix it all. Cook it in a bigger container. 😋

Bundt cake pans originated here in Minnesota, and the hole in the middle is so you can cool it over a glass bottle.
Actually so it heats the inside and outside evenly.

Hi guys! I am originally from the Philippines, and in my country, we do flan with only egg yolks and we strain the mixture to make the flan smoother. :) Usually, 7 egg yolks, 1 can condensed milk, and 1 can evaporated milk. My mom grew up with chickens on the farm. She never lost the habit of cracking eggs into a separate bowl before adding to all those nice ingredients. Apparently it had to do with avoiding an unpleasant surprise that could ruin the good ingredients if added directly.
You two are the least pretentious foodies I know. It’s all about a)your resources and b)the Yum. You are fearless because you understand the science underpinning fermentation and storage methods. And just overall, your cooking chops are top notch.

My wife is from Mexico, and your flan recipe is spot on she also makes it with chocolate cake, they call it the impossible cake. To make the cake make your flan mix add it to the cake mix and bake till the cake is done (they will separate on Their own) the flip it out so you will have cake on the bottom and flan on top. I do believe she also has it in a water bath so the flan doesn't overcook.
When you eat desert first, you live a happy life!
For the silkiest flan, use Ricardo’s crème caramel recipe! I swear by it make it all the time, just made it this weekend. So silky, basically like a soft tofu. You’ll love it! The trick with his recipe is to heat the milk up to almost boiling but not boiling, temper the eggs with the milk and that’s the hardest part! Hope you enjoy it Ariel!

Our favorite dessert suggestion: oatmeal chocolate chip cookies with cinnamon, nutmeg, ginger, and a dash of cloves.
I often make crepes. Usually just powdered sugar for filling --- tastes just like the funnel cakes at the fair. But I do love pumpkin spice cakes. I, also, have pureed pumpkin from fall, I freeze mostly.
Chocolate chip oatmeal cookies
1 stick butter, room temp
1/2 C brown sugar
1/4 C sugar
1 egg
1/2 tsp vanilla
3/4 cup flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
Dash of cloves
1/4 tsp salt
1 1/2 C oatmeal
Chocolate chips (1 cup???) Or seasonal colored M&M's
Cream together sugar, butter, egg, and vanilla. Mix dry ingredients separately, then add to mix. 350F for 10-12 minutes. Yum!

We have a local donut shop that uses potatoes for all of their creations, and yes, you guessed it, the shop is called Spudnuts. I made Swedish donuts several years ago using leftover mashed potatoes, so good. Going to have to try your cinnamon rolls, they look delicious 😋

Thank you for sharing the recipes 'post it note' on the videos. It is great for us to explore your recipes. My wife and I get a kick out of Ariel's ability to always have half her meal, or dessert consumed before Eric even begins eating and then as Eric shares what they have prepared and looks at the camera ... Ariel has reached over with her spoon or fork and steals Eric's food (and inhales it before he notices).

Cooking with water in the tray is called the 'bain marie' ( Mary's bath) method. It not only provides moisture but also prevents the caramel burning.

In Bangkok Thailand they make either a sweet( desert) crepe or a savory crepe. But they aren’t a traditional crepe, they are cooked longer kind of like a cookie but are an excellent product just different. Again I appreciate the recipe on screen. I coaxed our local doughnut shop to make a few maple bacon bar's last year. One was a regular bar with the icing and one strip of bacon and the other was Bavarian filled and icing with two strips of bacon. They copied the voodoo shop in Oregon for me! It was really good, something about salty bacon and sweet go so well together!

For the Asian side, we used Yam for making donuts. Yam donut is considered one of our traditional desserts/cakes.
Next time grind the sugar to make powdered sugar. It will blend better...
Also, keep the crepes in the oven until you're ready for them. ❤️

Hi guys, the cinnamon rolls looked very yummi 😋 I made the same mistake: touched the caramel! It has been the worst burn I've ever had in the kitchen. Don't ever touch the caramel. 😉 Also, I would skip the cream cheese, in Mexico we don't make it like that traditionally, that recipe might be a variation, just skip it and you will get the silky texture. Great job on all the desserts. 🥰
Hi, here's an easy flan from Portugal (no cream cheese): 1 can condensed milk, same measure of milk, 3 eggs. The sauce: 1 cup of sugar, half cup of water.
First melt the sugar WITHOUT stirring (it will cristalize, as yours did) , and when it gets brown (don't let it too dark) put carefully the water, and mix on the stove until everything dissolves. Cover immediately the bottom of a pan, round it to cover partially the walls, let it cool.
Mix well the other ingredients until smooth (I use the blender), put it in the pan and cover it with foil, closing well the edges. Bain-marie in the oven for 45 min. You will get a smooth flan, with a dripping sauce. If you want it in ramequins, I believe 25 min in the oven would be ok.

Next time you make the donuts the best way to coat them is a brown paper bag. Just put sugar in and shake bag a couple donuts at a time , the whole donut gets covered also ground nuts and sugar is a great combo for these !!!
