You probably could but you would lose lots of enzymes. I haven't tried it, but I don't see why not (except for nutritional reasons).

I remember hearing about soaking nuts once before. I didn't know it makes them more healthy.
Is it kinda like washing lettuce?

I think it’s to soften them (before blending, crushing, etc)
