    My son, who lives in Philadelphia, was always impressed with my pie dough. But since I took him and his wife your empanada pastry and some other fillings like ground beef with potatoes, caprese, and a cherry filling, he wants me to go into business with him. That sounds like too much work to me but he couldn’t get over the flakiness and taste of the crust. It really sounds like it does on the video. He bragged to his friend at work who is Colombian about them and she insisted on having the recipe. Note in all cases I gave you the credit and shared your video. I must thank you again and hope that you have a great New Year.

    ive been looking for empanada like this for years. I grew up liking this when we spent summer vacation with the Lopezs' in Bacolod and the Hophelenas' in Silay Salamat!!!!

    Translating to Cups & TB instead of grams w/google search: (verify this is correct!)
    (note that liquid measurements are different than dry ingredients)
    250 grams flour equals 2 cups flour
    50g butter equals 3.5 Tablespoons butter
    140 ml water equals 0.6 cup of water (little more than 1/2 cup water?)
    180 grams flour equals 1 1/2 cup flour
    40 g butter equals 2.82 Tablespoons butter
    70 g vegetable shortening equals 3/8 cup vegetable shortening

    This is a delicious recipe, but it's less of an empanada and more like a handheld chicken pot pie 😋. It's definitely on the heavier side after oil frying, so we tried air frying but the dough although still flaky was much drier, kind of like a dry pie crust (which may or may not be what you want depending on your preferences). We added an egg to ours as instructed, but found it didn't really complement the flavor or texture profile at all, so we will not add it in future versions even though we LOVE eggs and basically put them in everything we can (it just didn't really add anything here). Maybe cooked into the filling might work better than hardboiled. You mention in the video that you will share the original recipe in the description - do you mind updating the description to reflect that? Thanks for sharing the video and doing this. 😄

      Air tight container, best to put them in the fridge then reheat it .

    What is the brand of you pot? If you don’t mind. Is it viking or all clad because it seems food does not stick on it. I have been looking for a good stainless steal brand. I do not want to use teflon because it is unhealthy. Thank you for the recipe.

    I’m wondering have you tried freezing the dough? I’d like to individual divide them already and flatten so it’s ready? Have you tried that? If not yet. You think this dough can be frozen?

      I haven’t tried, but I know you can freeze this there will be a very slight change on the texture but will still taste good.

      Ana Findlay VERY TRUE, I DONT know why they are always using grams. I also find it difficult to convert it to cups

      Grams are more accurate than cups. You can pack your cup with flour tightly or loosely, so it will affect the measurement.

      Yes . 15-20 minutes at 180 deg or ubtil golden brown don’t forget to brush the pastry with egg wash.
