I've been making this dish for 10 years. Sometimes I replace the bell peppers and mushrooms with spinach/cherry tomatoes. I've used angel hair, spaghetti, penne and bow tie pasta. I've even blackened salmon in place of the chicken. Great recipe.

Love this recipe. One that I'd like to see is blackened chicken alfredo! It's a nice twist on an italian classic. Maybe sometime in the future you'll make it.

Laura - Just made this for the first time (actually still eating!) Delicious. I make my own Cajun spice blend without salt for the reasons you mentioned. This wont be the last time either: darn good!
