I'm Mexican and the way I love to eat these is with lettuce of course and add just a few sprigs of cilantro and add some queso fresco on top of the burgers while they're cooking and instead of mayo like that I add just enough to the buns then toast the buns on the grill! So much more flavor! Then I make a mild salsa (lime juice, Serrano pepper, tomatoe, green onions and just a hint of cilantro into a blender and bam!) Flavor explosion in ur mouth!!

You should try soy chorizo! It tastes exactly the same. I've grown up eating chorizo and I actually prefer and I'm sure it would work the same in the burger :)

I'm Cuban and we make chorizo burgers too! We call them fritas and we top them with caramelized onions and crunchy shoestring fries. It's so good! Especially when it's paired with a banana shake :)

That looks amazing!! My mother, whose of Mexican descent, mixes chorizo with egg and a little onion in the morning and makes homemade tortillas for breakfast tacos. That's usually how I eat chorizo, but we need to try this. Maybe with a little avocado and queso fresco...
