I've been adding chorizo to my chili for 15 years. It adds a wonderful flavor to it when mixed with ground beef.I usually add 1 lb of chorizo to 2 lbs of beef.

What I feel is amazing about the old school corn tortillas as you can cook them on one side and they get nice and crunchy while still building chewy

Gonna use this idea when I make my Fritos Pie!! Just a pie crust filled with meat, cheese and salsa. Bake and top with Fritos, more cheese, sour cream and any other garnish you would like. I’m excited to try it with chorizo!!

I was just about to comment something very similar it was almost completely raw, and for the nay sayers that was NOT the chorizo.
Yeah that was an awkward moment .. and why is it not broken up after her emphasizing how important it is to break it up. Looks great minus the chipotles, they have an overpowering flavor .
Amazing recipe! We swapped a few ingredients to keep it low calorie and super flavorful. I put up a video on our channel if anyone needs a lower carb meal option.
Put 1 tbs of the chilis in adobo and this now easily my go to toco meat recipe.

That was incredibly interesting to follow. I have never had a Taco or Burito or whatever else there is in the TexMex range, Quescu thingys for instance, but I wish to and this level of presentation is useful because it shows what to expect.

Thanks Ashley, different from Texas tacos but they sure look good. You do have the usual suspects involved though. Adding the Chorizo is a good Idea, as I use 93/7 ground beef pretty regularly. We add the tomatoes, pepper, onion, and cilantro, in the Pico de Gaio after cooking the meat. I always enjoy your recipes and shows.
Combined with cheddar cheese, Mexican-style chorizo makes a mean quiche. ;)
What's a boxed taco kit? I don't think I've ever seen that. We live too close to Mexico. I don't think boxed taco kits are allowed here.
I call them "White Mom Tacos" --- it's a box with a family pack of taco sauce (mild hot sauce usually), hard boat shaped taco shells, taco seasoning and you just add the beef, veggies and cheese. Many of us in the Midwest grew up thinking they were authentic Mexican food, like LaChoy was authentic Chinese. I've long since learned what actual Mexican food is, but sometimes the taco kits are good as childhood nostalgia.
But nothing beats the tacos made by the mom & grandmother in the back of my local neighborhood bodega, down to the freshly made tortillas.

@@Leguminator yep, that's exactly what we grew up with. it was always a big deal, especially the LaChoy "mix".. all's it was was soy sauce, and then add celery... maybe bean sprouts if we were lucky....

Yea, I suppose I can see that being common in some Midwest areas. However, I watch Cowboy Kent on YT here. He's from Oklahoma. Doesn't get much more Midwest than that, and he makes legit tacos, so it's not everywhere in the Midwest.
Cut down on the filling by 50% and save the cilantro and onion as a garnish at the end and these tacos would be perfect for me.

would it be ill advised to just squish the chorizo in with the ground beast like you would mix a meatloaf? just so when you're cooking it, everything is already mixed together?
I wouldn’t work the meat too much, it will eventually start to take up the texture of well, meatloaf.

What's a Autobot Taco texture? What do people like? Like there's a fight between crunchy taco and soft taco lovers. Someone like that super Krispy krunch of the taco where it just explodes all the ingredients in your notch and some like the crunchy chewy texture of a flour tortilla

Have you ever tried a recipe ofCamerones a diabla I think it was called
I'm six months into keto so I made taco shells out of shredded cheddar. Make a six inch pile and bake at 400F until the piles get brown around the edges. Take them off the baking sheet while they're pliable and drape them over two skewers that are an inch apart that sit on top of two cans that are the same height. They harden as they cool.
The filling was amazing, I didn't mess with that.

When I read the ingredients in Chorizo, "lymph nodes and salavary glands" I steer clear. I decided a long time ago that I don't eat parts of any animal that are the body's filters
Look for soyrizo in or near your salad case in your market. Same flavor and spices but no no unmarketable ground up animal by products inside.
Not all chorizo is made the same. Look at the versions made by the major sausage brands.
You can make it yourself very easily. I believe ATK has a recipe.

Ashley, I cringed when you used the sharp side of the knife to scrap off the garlic from the garlic press. I was taught to always use the non sharp edge of a knife to scrape. My mouth is watering watching the process of cooking that taco filling. MMMMMMM !
Relax. Worry about what really matters in life…..not the minor use of a knife on a garlic press. Breathe in….breathe out…..you will be ok….maybe. Maybe not…. Up to you..

Tortillas are so tricky they can taste delicious grilled but if you burn any part of it it becomes many times more bitter than what's tolerable
Chorizo tacos! Skip the beef, go to the nearest bodega and pick up the chorizo. Also great in scrambled eggs, aka huevos con chorizo.

Unmarketable byproducts of animal processing. Nothing goes to waste in industry. If you've ever eaten a hot dog or sausage, you've eaten lips and other byproducts.
Well, historically, the entire purpose of sausages is to use up all the scrap bits of meat.

better yet add refried beans to your ground beef. Great mouth feel and taste and it make a little bit of meat go far.

I would suggest people get their chorizo from a Mexican market. i always find the mix they use at whole foods isnt that flavorful. You really want the vinegar and Chile flavor to come thru

I didn't even know that you could buy a "boxed kit" of tacos. Who would waste their money on that? Fresh home made tacos are cheap, flavorful, and everyone eats them! Plus there's generally left overs for lunch.

The method does not work for corn tortillas I need to be on a flat top with some oils or they will be dry. Flour tortillas works perfect or took them in a tupperware container in the microwave and they'll come out perfect
Don't buy the crap chorizo that comes in a plastic tube. A couple of times I tried it they was so much fat that it almost cooked down to nothing. I go to a local grocer that has the butcher in the meat department make it or get it from a super mercado (Mexican super market) or carniceria ( Mexican butcher). They have just enough fat to add flavor.
I’ve found that serrated knives work better on tomatoes.

Since we have marvelous Hispanic markets in my area, we always use "Carne Para Tacos". Ground beef in tacos is not really a thing for us anymore.

no soggy tacos for me thank you. you shouldve made a sofrito with the chipotle peppers, onions and tomatoes. then add it to the stew and thicken it. your meat just looked too wet.
