I made this tonight. My husband and I aren't great fans of chicken thighs, and my husband is basically a meat and potatoes man. I was worried, but the spices and the rice was great. He even had second helpings. And yes, we did like the chicken thighs. Thanks for the recipe, we will be using this in the future.

Soooo good! Flavorful and I love the spice mix. I wanted to rush the chicken 😂 but I didn’t! I followed directions lol. But I do think I added too much olive oil to my pot though. The first side took a LONG time to brown , so before I flipped the chicken, I took out some of the olive oil and the other side cooked much faster. I think you just “coat” the bottom, I gotta get better about that for next time. I kind a glopped it. Came out delish and fam loved it.
We made it and it was VERY tasty! The next day I froze some in separate bags. Will see how that comes out. I’d love to see you a White bean purée soup someday! I suppose I could just purée your current recipe? Had some at Fatted Calf (Napa) today and man is it goooood! But I bet your version would be even better!

I'm waiting for mine to cool now before eating but I also used a little too much olive oil lol. The house smells sweet and inviting.
