If they weren’t interested in seeing what Chronos was going to do with their plan, they probably could quite easily get rid of him.

Chaos is not stupid, it's more like Chaos is so far outside of everything that from this distance everything becomes equal and only by oberserving something out of the ordinary, Chaos recognizes indifferences. Also Chaos can't be too close to creation or otherwise the mere interaction would cause everything to be erased from reality. Oberserving, being curious and granting some boons but still being far away is the only thing Chaos can do. Chaos even if they appear careless don't want creation to end and hold sympathie towards creation. That's why they can't get involved and based on what we know from the first game, Chaos is conflicted because Chaos cares about certain individuals like Nyx or Zag. As naive as it may be, when Chronos contacted Chaos, it was a child of creation talking to the parential figure that birthed creation, just like a child asking one of the parents on the playground for chocolate.

They definitely do care about freedom of their creation, and they care for Nyx and to an extent Zagreus and maybe even Melinoë because of their interactions allowing them to become closer. However, if proximity allows Chaos to care, then Chronos is someone who they have a care about, and that is one of the two vendettas Chaos has ever cultivated. The fact that Chronos leveraged the only other vendetta against them is definitely not tolerated well. Chaos has far more words about it, which makes me think they’re trying to brew ideas and, dare I say, _chaotic plans_ in Melinoë’s mind. If she’s on a path of her own creation, they can assist in their own way.

I suppose that Chaos facing away from the player could have its own intrigue - like the eye is still watching, but from its periphery, not even bothering to give you its full attention. Being removed from reality is the reason they wouldn't understand deceit though. The agendas and machinations of others are so insignificant to Chaos that the idea of being roped into one of them is alien in itself. Thus not understanding deceit. Rather than taking that one line of dialogue at face value, people are just placing it in context of the character's established personality and motivations throughout both games.

Chaos isn't stupid. Try Wildly curious and/or Unknowingly experimental. They didn't know what Chronos would kidnap the fates for his own means, but it's shown that they're relatively indifferent to the outcome. Chaos is chaos, and the fates now don't have the chance to screw with peoples lives (both mortal and immortal). While they were deceived thanks to their general lack of care making them unused to noticing clear signs of ill-willed intent, they're looking at every possibility, there's just ones they haven't considered just yet.
Do they not care? I'm doubtful, since Chaos expressed their displeasure at the action of being tricked. Emotion in the more negative spectrum are just a bit new for them.
