Raw eggs are a big part of Japanese food and put on noodles like this very commonly as well as other dishes. In noodles, you mix the egg in and it mostly even cooks in the hot noodles.
I've always doctored up my instant noodles with fresh veggies, etc (try putting green onion in the broth as it boils...so good), but I've never thought to cook up shallot in the pot first. That looks amazing!
It for making the instant noddles more delicious & aromatic.
I've always stir-fry it with onion & garlic.
But don't put instant noodles when the water not enough boiling or overcooked it.
Otherwise, the noodles will go un-appetizing or too soggy to eat.
