Loved the dog moan as u took out the thermometer. I actually use real Vermont maple syrup and Knob Creek bourbon mixed on my last flip of my sear I add to finalize the flavor. And also have some mixed with melted goat butter for serving.

The way I learned was by trial and error. I have burned and undercooked many meats. But I just kept with it and now I am a "grill master" by my family's take along with the neighborhood
I grilled up a tri tip last weekend. My wife loved it. The downside is I really thought there would be leftovers seeing how large it was. There were not.
Scallop stuffed Smoked salmon. Brine the salmon overnight in bourbon, dill, brown sugar and lots of salt, butterfly it, stuff it with scallops, shallots, garlic, lemon, black pepper and salt, close it up, reseason the outside with whatever you like (i used dill, lemon zest and plack pepper). Smoke for about 2.5 hours over Alder wood until cooked fully through. Thank me later

As a California resident, the tri-tip is the best thing to ever come out of this state, and that is a hill I would gladly die on.

Clase azul is great. I've never cooked with it, but a mango habanero ribeye with a glass full of it on the side is amazing.
