- Prepare your taste buds for a tantalizing THAI SPICY journey! On this fiery episode of Heat Eaters, our host, Chef Esther Choi, joins forces with her friend and renowned James Beard award-winning Chef, Justin Pichetrungsi. Their mission? To create spicy Thai Tacos for Justin's Thai Taco Tuesday event at his restaurant, Anajak Thai.
Their culinary adventure kicks off with a visit to the Northern Thai Food Club in Los Angeles, where they seek flavor inspiration. From fermented crab papaya salad to sai oua, a flavorful herb-infused pork sausage, and spicy chili dips like nam prik num and nam prik ong, this sensory exploration aims to stoke the fires of inspiration for their tacos.
Next, they visit Silom Supermarket in the heart of LA’s Thai Town, sourcing fresh and unique ingredients intended to infuse their tacos with bursts of flavors. They even secure a marinade paste crafted with Maeng Da, or giant water bugs, a regional delicacy in Thailand that could just be the ingredient of the year.
Then, in a culinary showdown reminiscent of an Iron Chef battle, our grand finale sees Chefs Esther and Justin going head to head at Anajak Thai - each crafting their version of a spicy Thai taco. The challenge? To impress the discerning palates of their esteemed guests and judges, Chefs Jet Tila, Molly Baz, and Vanessa Lavorato. Will they withstand the heat?

I really like this guy, he just seems naturally funny. Like he has a natural kind of dry sense of humor to him that probably makes him fun to be around. He should probably get his own show or something.
I know, there were moments when I forgot Justin was even a chef, he just seems like a chill dude who knows things in the least obnoxious way.

Thai food is my favorite cuisine in the world (apart from Mexican), I enjoyed the cuisine in Thailand, its so delicious and yes, SPICY. As a Mexican American, I could taste similarities between Thai and Mexican cuisine, a fusion between the two would work so well, not sure why this hasnt been a thing.
I'm loving this show with Esther, she is absolutely perfect for this!
When I saw her in a Pro Chef vs Home Chef video, I loved her personality and eloquence but didn't see her in a lot of other content. So satisfied and proud that she's in more CZcams videos now!!

Sichuan heat is like tug you to bed ,keep you warm and cozy until the cold goes away.
Thai heat is like set to you to fire , and the fire actually kills the cold mercilessly , along the process, potentially killing you too so you need to reach for water and milk to tone down the heat.

I love it when restaurants have spicy food that actually surprises me. I make my own hot sauce with peppers from my garden. Yesterday I had a wrap for lunch and tacos for dinner, all with a 6 month fermented Carolina Reaper sauce I made. It just hits differently than any restaurant’s spice. The heat is there, but the flavor is also complex and so exciting.
Im a fans of Esther since her kitchen gadgets show. Justin on his calm sass demeanor are her best show partner yet I've seen with..

Thai spicy pork salad is the most deceptively named dish I've ever eaten. Basically a plate of really hot pork with a handful of leaves mixed in to garnish. It blew my head off, and I'm generally pretty good with spice. I have 6.4 million Scofield God Slayer sauce at home that I use for making hot wings 😂

I like that you guys were trying the food as you went. Too many other shows (and people I know IRL), fail to do this so it's a coin toss on how the food will turn out or if it could have at least been better. I was taught to always taste things so it could be adjusted if need be before it was finished and while I'm sure most people know this, it doesn't always get shown or explained to people on shows like this.

Great episode. I love Esther ! I remember when I first saw her on youtube reviewing kitchen gadgets a lot of people didn't like her for some reason. I think it was mainly because people were salty that the previous reviewer was replaced.

Fresh Thai chilis on Pad Thai is one of the best things I've ever had
Thai is probably the spice that have the least time eating personally! So I was happy to see Ester expereince some of it for me in a way. May have to find a place locally

I've always loved spicy foods, the spicier the better! Unfortunately though, I have now been diagnosed with GERD, and have a failing gallbladder, so I can't enjoy spicy the way I want to, and love to. My wife is Thai and after 25 years my spice tolerance has grown exponentially. I would have loved to test myself alongside Esther and Justin. I saw khao soi in the first clip. 5 years ago you might not have been able to order it anywhere in Bangkok, but now the dish has exploded in popularity all over Thailand and became my favorite Thai dish over laab and masaman curry. Love this show!

Was so great seeing stuff I eat all the time at the first restaurant. ตำมะเขือ และ ตำขนุน are two of my favorite things to eat and I'll have any kind of ตำส้ม (ตำแตงไทยใส่น้ำมะขาม my favorite) anytime.

His explanation of Royal Thai Food is spot on. Sweating, breathing loudly (from eating spicy food), excessive emotions or expressions of any kind, are all no no’s in “proper” palace etiquette. Also spiciness increases your appetite, and eating excessively is also not “good manners”.
It’s also a disappearing cuisine, because it is often very complicated, comes in small proportions, expensive, and although every dish is delicious and inspired practically all other Thai cuisines, isn’t particularly “exciting” or “stimulating”.
