The Best Mauritian Dal Puri!! Authentic Street Food Recipe

Ingredients:
300g Flour
200g Split Peas
1lt Water
1tsp Tumeric Powder
1tsp Salt
1tsp Fennel Seeds
Method: Should make 8-10 Balls
In a pan add water salt turmeric and bring to boil. Add the yellow split peas.
Boil the yellow split peas for 20-30 mins until soft and crumbles when pressed between thumb and finger.
Drain the yellow split peas reserving the water into a jug. Place the peas onto a large tray and allow to cool completely
Once cooled, add the toasted fennel and the yellow split peas to a food processor and pulse until very fine, this will take a few minutes. You need to scrape the bowl down and keep processing until you have a fine crumb.
In a large bowl, add the plain flour, and then slowly add in the warm water that you cooked the yellow split peas with. Mix with your hands until you get a super soft dough. Divide into 12 equal balls.
Take 1 ball and follow out the middle using your thumb and forefinger and create a well, fill this really densely with the fine yellow split peas powder then carefully bring the ball together by sealing it up and rolling it back into a ball. Repeat with all other balls until all 12 are filled.
Dip each ball of dough in flour and carefully roll out until the bread is super thin
Using a pancake pan/roti pan/tawa, brush with some oil and ensure a medium heat, add 1 dal Puri at a time brushing quickly with oil flip 3 or 4 times and take off heat. It's important to see bubbles but not yo colour the dal Puri or make them brown. Each dal Puri takes 30 seconds to cook.

In Guyana we add more seasonings to the dal, also we would grind the dal while its still hot because it tends to be a bit more difficult to ground when its cool/ cold. We would add hot peppers, garlic, gerrah, salt, and other blended seasonings. Its awesome. Nice to see a different way to making it. 🇬🇾🇨🇦😍

It's so worth it, Mauritian dhal puris are some of my favourite comfort food along with prawn rougaille. Shelina also has fantastic recipes with her incredible palate! Loved her food at the open air festival

It really doesn't matter which part of the world we live in..when we make puris, whether it's dhall, pigeon peas etc, the puris were handed down to us through our ancestors from India..and it's been modified to suit our tastes. In Trinidad, we make it exactly the same as this host except for the use of the water she used to knead the dough, every utensil she used, we do too, even the names for them.. Credit should also go to our Indian brothers and sisters, for giving us this delicious staple roti/puri...and to our brethren from the Indian diaspora, congratulations to us for keeping the culture alive..ohhh...we also use baking powder in the dough and it swells like a balloon on the tawah...😋😊

I know right only the people who comes from the Caribbean Islands and Mauritius knows about this although people in Mauritius makes it a little bit different from Caribbean people. But there are quite a few Roti shops in the Toronto area that are selling them now.

Hi Shelina thanks for all the recipes. I've bought a few Mauritian cookbooks from Le Caudan when I was over there but just bought yours. Best Kalia result, and I'm having another go at these. My first ones I used some low gluten flour but they came out like giant oatcakes (no problem, I love oatcakes!).

My 90 years old mum always like to make dhal purree to give us a treat. She was a shopkeeper in a village. It never came out like the one we buy on the street. She has been given the wrong recipe and the wrong method. I always admire her taking the pain and patience doing it, with the basic utensils.

Great tutorial! I've never thought of using the dhal water in the dough - I'm going to try that next time. I am from Grenada and add cumin, spices & scotch bonnet to the dhal filling.

Very similar to Guyanese dhal puri, some people add fresh pepper to give it a mild spicy taste when blending the peas. Had a great time in Mauritius two years ago.
I can't believe it came out so light and fluffy because it didn't inflate with hot air as it does in Trinidad and Guyana
This turned out so good! Other than I had problems with the dough being so sticky it was an easy recipe to follow. I blew away my Mauritian wife with this authentic tasting treat from back home! Thanks from Canada!

In Trinidad dal puri is also a Sunday lunch in many household and served with many curried dishes such as chicken, goat, shrimp, aalloo, chana or some times aaloo and chana cook together, mango. We grind the dal and mixed with geera garlic hot peppers and sometimes with bandhanya as per an your taste.
The real taste of your daal puri come from the sentimental cooking equipment from your mum kitchen she must be very very proud of you Shelina
