I think you're mixing up velveting with baking soda and velveting with starch (not flour). If using baking soda, you wash it off. If using starch (corn or potato), which is mixed with egg whites, you do not wash it off. And neither is necessary for thigh meat, as it's already juicy enough on its own.
Why does the Garlic hurt you!?!?! I suggest you start having a small amount of lemon water, or Apple Cider Vinegar in water right before a meal, and don't drink for 1/2 hour after eating. It will increase your Hydrochloric acid to help digestion. I also like to milk my gall bladder to help digestion... JK I don't have a gallbladder!!! Also, cayenne pepper is great. Toss it in a pill if you need to. Great for your heart & blood.
From what I can see on the Kosmos website, their Dirty Bird rub is mostly salt, sugar (white and brown), and chilli powder. Then they also have paprika, garlic powder, dried onion, and a few undisclosed spices. Looks like a pretty standard chilli-based spice rub. Look up some recipes online.
