Ingredients:
1kg lamb mince with 20% fat
1 onion quartered 230g
A good handful of fresh coriander leaves and stalks
3 green chilies, add more or less according to your own taste
Spices as follows:
2 teaspoon salt
3 teaspoon coriander powder & garam masala
1 teaspoon Kashmiri chili powder & turmeric powder
1 tablespoon of cumin seeds
Cold Water
Oil spray (or oil and a silicone brush to apply to kebabs)
20 cm lollipop sticks

I still remember the shami kebab I had in Peshawar - one of my best food memories ever.

I buy them sticks, for paint stirrers, will be trying this out. I have trouble with the metal ones, meat keeps falling off. Absolutely brilliant vid. Thank you.

The trick is with metal one you must right after you put your kabob on your barbecue you must turning your kabob every 15 to 20 second for the first 3 minutes or so then your kabob won't fall........
The trick to keeping them on the metal skewers is that the meat has to be cold so prepare it a minimum of four hours earlier.There’s usually some fat with the meat as well. It makes it holds better. flat metal skewers work best. That’s how we make our Lebanese Kufta.

A young man in an Indian takeaway in West Ham, London, to his family's recipe made the most delicious kebabs I've ever had, and had people queuing. I watched him once, prepping. He went by volumes, equally of coriander, green chili, ginger, and garlic, all fresh and chopped. I think he added salt and some black pepper, but I didn't see any dry spice, which, in a lot of kebabs you buy in restaurants, make them a dry and cardboardy. The result was a juicy taste explosion in the mouth... you'd buy a couple and immediately go back for four more. Unfortunately the business closed some years ago, but the memory of his kebabs are the ones I've judged all others by, and they all fail. I think the trick is to uses as many fresh ingredients as possible.

So true about the prices, i found a place selling literally one kebab that’s been wrapped in naan bread for £6.00 😳 ever since i got a air fryer i can’t stop thinking about what to put in there next 🤣 the flavours of regular burgers and sausages from sainsburys tasted so much better than under the grill and drenched in oil, can’t wait to do kebabs next, absolutely amazing once again 👍🏻👌🏻❤️🇬🇧

The wooden lolly sticks are a great idea as it's hard to find short metal flat skewers that would fit in the airfryer

Amazing flavour, I didn’t use any sticks/skewers just shaped into sausages and air fried 😂 Filled pitta and green chutney with salad. Definitely a keeper!

Wow, looks easy to make, will definitely try these. But what is 20% in grams ? the asian or Turkish shops near us have no idea what 20% is, they ask us how much in grams.

It's a well used airfryer 😂I can assure you I do clean it regularly but it's pretty tough to remove as its such a tight space.

Yes, make sure you get some fat content, around 20% otherwise it'll be dry. Otherwise should take around the same time.

My plan was to make a sausage with your mix and then freeze then slice what I need for a kebab straight from the freezer - then pan fry the slices.
Ive seen a spice manufacturer/mixer do this technique.

You can make them with lean mince ut they won't be as juicy and moist of I'm honest. I don't have a fat substitute I'm afraid, but once they start cooking most of that fat kinda cooks out.

I personally think this recipe doesn't need it but if you wanted to add some in you could do.

Though only one gripe, your measurements of a teaspoon of spices, etc. The spice measurements you show at the beginning of each video look nothing like the measurements you say. They look a lot more than a teaspoon or tablespoon. Spice measurements are vitally important for the cooking, so I'd like to get that more accurate based on your exact measurements, please. For example, your teaspoon of a spice looks more like a tablespoon size if not more.
They look about right to me. Baring in mine, you don't know the size of her rectangular plates. They look really small against the lollipop sticks.
Thanks for your comment. I can confirm that the measurements stated are correct. I'm. Not sure how they seem more than what i state?! The white plate that I use for my ingredients, are actually canapé plates which are small I begin with. Hope this helps 😊👍

Nice recipe but I don’t think i want to buy an air fryer, what I don’t like is how little quantity it cooks in one go. For a single person it is okay not for a family of four or more. I will follow your recipe and cook in my single oven, so many of them in one go. You didn’t add any ginger or garlic, that’s unusual.

My daughter bought me ninja 5.2 litres in March and I don’t know how we coped without it. Myself especially. I admit it’s made my life far easier in kitchen. I’ve learnt how to get the best out of it.

I love making my homemade chips in it . I don’t have to fry them. But I don’t like frozen chips made in Af.
Last month we did Moroccan grilled lamb chops.
Took 3 minutes each I was blown away.
It makes fantastic cheese grills etc
We cooked 12 full crispy wings in it this evening on racks. My brother has 2children under 10, The double ninja and they love it for making so much food for them.
So, much depends on your personal cooking needs what sort of food you and your family eat and lifestyle.
How often you cook for guests.
We often just do batches as required. It’s still easier than the main oven
I’ve baked a corn bread in it two weeks ago. It cooked Turkish boreks far better than the fan oven.
A few pasties are beautiful in it.
It enables me to warm food with less effort.
My only criticism of this model is the narrow tall drawer which can make a ton of food but needs more stirring too .
We have cooked 1 kg chicken or more in it no problem but a wider more shallow drawer would suit us far better. The instant pot brand has launched one that I’d get in future.
Obviously roast chickens for a big fat desi family gathering needs the oven for tandoori chicken or big baked desserts etc

You can mould them without the skewers, it's just easier on the skewer!
