I don't understand the people in this comment section.. This is passion, and I'm sure it tastes like passion as well no matter how much or little food is on the plate. It looks beautiful, keep doing what you do :)

Degustation is a style of dining most people clearly do not like but I enjoy it once or twice a year, usually when I travel. This place looks great. 👍

Okay so I'm going to say something very "Vegan-y" [Spoiler Alert]
How can you build a brand for yourself being well rounded in flavors, techniques, & creativity, ignoring the ugly foundation to which you've built on. Has any chef checked into what goes on with these animals especially in the dairy industry? Look at how terribly effects are on the enviornment. We live in weird world where nothing gets connected and empires are built on complete vanity and unecessary death.

Chefs know what's going on. Most good chefs DO NOT source their meats from places where horrible mistreatment occurs. At the restaurant I'm a cook in, we source all of our stuff from reputable places. To a chef, the death isn't unnecessary. It's a death for the sake of food, for the art of cooking.
