I have a 2015 Grand Cherokee (You can look up the cluster gauge if you'd like to understand what I'm talking about). About a month or two ago I replaced the thermostat myself with an aftermarket thermostat (Duralast 82303DL). While i'm driving, it's steady on the third quarter mark. I'm too dumb to understand temperature gauges so I don't really know what temperature I'm at. I'm debating on buying an OEM thermostat and buying two gals of 50/50 and just doing an entire flush just to feel some type of ease. It's steady but does go down and fluctuates from the second quarter mark to third. What do you think? Should I go ahead and do it or is it okay for right now?

I'm at 93,000 miles right now, I changed it around 90,000 miles. Should I do it now or wait until I hit 100k miles?

If I'm following you and it's running up towards the H then you should be fine. When a thermostat fails it fails open so your engine will actually run cold. It'll also throw an error code saying your engine isn't getting up to temperature or is running cold. That's an indicator that you've got a thermostat problem.

Why replace both the thermostat and housing instead of just the thermostat?

What is the engine temperature when you drive it now after the change?

Does the check engine light go away by itself after you fix it ?

The engine has to complete 3 or 4 normal warm up cycles to clear the codes and switch off the check engine light. You should pull the codes to make sure there's no other codes being thrown, but yes, it'll clear in it's k own.
