I have made this it's delicious. Everyones loves my stuffing I use 1 grated carrot, 1 loaf bread the white part only as you did Matt, 1 finely chopped onion (love my kmart chopper), packet of mixed herbs, tons of butter!
Dont know why people get upset it's not a traditional ground hangi, we already know that duh, this is just the oven version, call it something else if it makes you feel less offended. It's still a great family meal though.

Never in my 77 years of cooking for whanau and at various maraes, have I ever seen carrot added to the stuffing....so I'm gunna give your burnt butter version a bash next weekend. Because we're lucky enough to have plenty of watercress and puha out the back, we'll use that instead of cabbage. I also place manuka smoked woodchips in a small oven proof dish on the oven rack underneath the food tray. Gives the kai a lovely smoky flavor. Thanks for the recipe...

Very cool! 15.dollars fir 3 kumara, yeh.. with you on the never gonna happen. Dad did traditional, but got these fancy hangi steamers. It's not the same. There's this dude who sells seasoning he swears is just like hangi. But you need a special pot that cost 200dollars to pit it in.😅🫣 Would double wrapping woodchips, etc in foil on a shelf below the tray-mimic the smoke of hangi rocks maybe? Or borrow an actual hangi rock and heat in oven before food goes in.

Use Wrights liquid smoke 💨 to marinate the meat, it’s not as good as the earthy taste but the smoked flavour is close enough.

The only "Traditional" part is the cooking 😂
Whilst I do think pigs were introduced noone knows where the Māori poaka kunekune pig originates as that specific breed of pig is found nowhere else in the world. The Māori chickens the largest in the world was the moa lol, that's the name for chicken all throughout the Pacific. Sweet Potato/kumara and Māori potatoes such as the purple peruperu potato are native in that they existed with Māori pre-european times. Yes traditional hangi pre-european times would have been quite different consisting of things such as kumara, potatoes, watercress, bush asparagus 'pikopiko', seaweed, seal meat, various birds such as 'kereru' pigeon and duck etc. Also hangis varied by region, northland tribes would have had taro, southern tribes muttonbird and so on.
kumara is not introduced, but the three varieties we currently use are, same goes for potatoes, its disputed if there were potatoes here before Europeans, and those varieties are lost now if they were, but theres plenty of Maori sources that claim to have had riwai prior to Europeans and why would that not be true?
bro I have been doing hangi all my life and if yr hangi takes 7or8 hours yr doing it wrong
7-8 hours, how many people are you feeding. Almost all hangi whether it's ground or steamed takes 3-4 hours. There is no right or wrong way as long as it comes out cooked 😂😂
