- Chicken Green Curry or KAENG KHIAO WAAN is a Central Thai variety of curry. The word "green" as in the name "green curry" derives from the color of the curry which comes from green chillies.

I use the stuff almost weekly this is spot on, except you can also start with some of the thick part of the coconut milk instead of oil.
I can't go without sauteed onions and mushrooms in this. Can't go wrong

Soybean, but olive oil or butter it good too. Mostly per region availability.
vegetable and coconut works okay as well
