Ive never been more happy for a show to end as i was this one. The plantain drama was freaking me out, LMAO
Really enjoyed watching you cook Jamaican cuisine. The best authentic rice and peas are when you soak dried kidney beans preferably or black eyed peas overnight and cook the peas with various seasoning for about 1.5 hours with coconut milk before adding the rice . Similarly, the tastiest chicken or meat will be when it is marinated ( preferably overnight) but if not, then a couple of hours or so on the day . I too,take shortcuts and have used tinned peas and only the “older folks” can tell the difference. 🤣. Also gave up red meat about 5 years ago and the only thing I really miss is curried goat or oxtail, although the vegan version I cook is a satisfactory substitute. Have a wonderful time celebrating your 21st anniversary , Nadia and Mark🎉🧋.

Wray and Nephew is the traditional rum used for rum punch in Jamaica and mixed with a fruit syrup or ginger beer the blacker the skin of the plantain the sweeter it will be 😋
This was nice to watch black eyed peas or kidney beans make nice rice and peas…you can also use them in soup….hope you enjoy your anniversary 💜❤️💚

Enjoyed this episode so much, Mark's story is so relatable as I grew up in South Norwood next door to a Jamaican family. There were 4 children in their family and we became constant companions and called their Mum Aunty Norma. My brother & I used to climb through a hole in the fence and into the kitchen...there always seemed to be food being cooked and it was so exciting because it was so different from what we ate at home....such happy memories! xxx
