You're confusing challenge rules with culinary rules
That makes no sense since not tempering chocolate is a KNOWN CULINARY FAIL in these recipes which even Claire admits and started tempering. SCIENCE RULES not game show rules.

I worked at the OREO factory in Chicago before it closed and they were made 24/7 using a rolling mold/punch, a city block-long oven on a conveyor, the cookie is just a standard chocolate wafer cookie, like a Nilla wafer but chocolate and the cream was made using pure hydrogenated oils and emulsifiers and flavoring. There is no dairy in the cream ... accurate. When I worked there we got a lot of free cookies and I got super fat. Cheers!

Before watching this, I wasn't in the mood for Oreos. Started watching, wanted an entire package of Oreos. By the end of the video, I only wanted her Oreos. So, now I'm sad.

*Here's how you make a gourmet Oreo:*
_Cookie:_
155 g butter
⅔ cup sugar
¼ cup brown sugar
1 tsp vanilla extract
1 cup regular wheat flour (10% protein)
½ cup strong wheat flour (12% protein)
3 tbsp cocoa powder
2 ½ tbsp alkalised cocoa powder
½ tsp salt
½ tsp baking soda (sodium bicarbonate)
1. Melt and brown the butter, then let cool until room temperature while stirring occasionally.
2. Blend butter, sugar and vanilla extract.
3. Sieve and blend the dry ingredients, then add them to the butter-sugar mixture and blend until everything is well combined.
4. In pieces of *9 g,* put in moulds and *freeze for 10 minutes.*
5. Bake from frozen, for *14-16 minutes at 175° C* (350° F).
6. Let cool on a wire rack and turn half of the cookies upside down.
_Filling:_
50 g coconut oil
50 g cocoa butter
100 g powdered sugar
1 tsp vanilla extract
½ tsp salt
7. Melt the coconut oil and the cocoa butter in the same pot on low-medium heat while stirring to combine and avoid splitting. Let cool to room temperature.
8. Mix the fat with the powdered sugar, vanilla extract and salt. Stir to make an even, thorough blend.
9. Spread the mix on a baking paper and roll to a thickness of about *3 mm.*
10. Punch out circles slightly smaller than the cookies.
11. Freeze until solid and then put the filling on the upside down cookies.
12. When the filling has thawed, gently put the cookies together.

ok but THE BEST thing about this recipe is not only is it easy to make and perhaps healthier/tastier than the original, there is NO PALM OIL. And that's great. Palm oils destroy rainforests.
I have to admit though it's cheaper.

I feel the the editing was really off and not like the others. Everything she did was so sped up and there was almost no challenge. No walk through her journey, just success success success. . I liked the struggle and the frustration and finally the relief and proudness at the end when she finally figures it out.

I think my favorite thing about these videos is the gourmet chef remarking on how the store-bought, processed food is delicious. I feel like a lot of chefs would turn up their nose at much of the stuff Claire recreates, but everyone in the kitchen here is just like "yeah, it's so good."

Candy is one of those foods where the factory does it better than a chef can. They have a lot of specialized machines and ingredients that can be difficult to recreate in a kitchen (which is why she has such a hard time on some episodes). Other foods though, like frozen dinners, is where a factory is extremely mediocre compared to any decent chef. Even a home cook can make better food than comes out of a factory 9/10 times.
the frozen dinners maybe a lot more mediocre because they have to adhere to extrme standards when using certain ingredients ( meats, spices and produce) and machinery. processed food is a lot more chemically changed than candy because candy is heated to high temps which also breakdowns added chemicals. But if at home a chef doesn't have to adhere to factory standards and can use the freshest things they want or use gmo peoduce.

Ferrero would be a good one. I imagine the challenge of that one is really mostly in the creation of the wafer, though. That would be challenging just because of the shape, more than because of the ingredients. In many ways, it's the kit kat but just harder without the specialized machinery that makes it trivial. But still yea, would Claire have to make her own hazelnut chocolate too XD

I always get this sugar cravings whenever I see Claire’s “Gourmet makes” videos.
Idea: Claire goes back and revisits some of these recipes after she has the basic down and does some of the other flavor variations.
You can actually see how proud she is about her work because she went all over the office to give people her oreos. Have to admit, they look amazing!
So the episode where Brad doesn’t show up ends up being the most stress-free 🤔🤔
Dough:
125gr AP flour
62gr bread flour
18gr black cocoa
14gr dutch cocoa
1/2 ts baking soda
ts vanilla extract
Pinch of salt
155gr browned butter
130gr sugar
50gr light brown sugar
9gr cookie
175°
14-16min
Filling:
50gr refined coconut oil
50gr cocoa butter
100gr powdered sugar
I found that 175°c is too high and burned the cookies, 150°c for 15 minutes is ideal if you're not using a mold.
Pro mode for oreo eating: Treat them as cereal.
after you make your gourmet treat, you should blindfold someone and have them taste both and have them guess which is which.
It's not an attempt to replicate the original, she is making a gourmet version.

Only one constructive criticism is that hers have butter, so aren’t vegan. I don’t know anything about baking, I’d assume it could be quite difficult to just replace it with something else.
