Vietnamese Egg Roll Recipe for a Delicious Noodle Bowl aka Bún Chả Giò

- Bún Chả Giò or Vietnamese Egg Roll Noodle Bowl. One of my all time favorite things to make and eat. This is my grandmother's recipe. I used to sit up with her and roll hundreds of these for church or for the local Asian market. I am so grateful for the knowledge I got from her. She is STILL ALIVE AND KICKING AT 103 YEARS OLD!!!
You will need:
1 package spring roll, lumpia wrappers
2 servings of rice vermicelli noodles
3 leaves green leaf lettuce
cucumber, sliced
cilantro, rough chopped
mint leaves
honey roasted peanuts
cooking oil (I used peanut oil @ 350 F)
Egg Roll Filling:
1 lbs ground pork
30 g wood ear mushroom
2 bundles bean thread noodles
1 yellow onion, diced
5 cloves garlic, minced
5 tbsp fish sauce
4 tbsp oyster sauce
3 tbsp sugar
2 tbsp sweet dark soy sauce
1.5 C shredded carrots
1 egg
1/2 tbsp salt
2 tbsp black pepper
Fish Sauce Vin aka Nuoc Cham:
1.5 C water
6 tbsp fish sauce
3 tbsp sugar
4 cloves crushed garlic
2 chilies sliced
1/2 lime
Pickled carrots:
1 C white vinegar
1/4 C sugar
1 C shredded carrots - Jak na to + styl

Just took a ride back to my high school days with my best buddies mom's vietnamese egg rolls in the mid 80's while in highschool. Your recipe all most exactly the same. Only there was 7up soda in the recipe. Awesome 👍

This was so good! Thank you for making it so easy to follow. We aren’t eating out and got so hungry for these. I made a rookie mistake and used sausage, next time, home ground pork for ground pork. Forgot that even plain sausage has seasoning.

My favorite viet dish!
Beautiful color on your fried spring rolls, but the caveman in me says it needs more pork! And toss in some minced shrimp while you're at it. :) Is that how your family ate it? When we made eggrolls, we wrap ours in lettuce, herbs, and noodles. If I see eggrolls in a bowl like that, I automatically think bun thit nuong...which means you're missing more grilled pork! LOL
Eating eggrolls wrapped in lettuce is traditional Vietnamese yes. But there are definitely one than one way to eat eggrolls. Thank you for sharing your family's way of eating eggrolls, but I am sure that I'm like you and don't eat standard "templates" of food. This goes with that and not with this

@@cheftuan True, but a Vietnamese will wrap anything and everything in lettuce and herbs and dip it in fish sauce. It's our thang. But I know you were making a noodle bowl, I was just expecting grilled pork along with the eggroll to make it a substantial meal since it's in a bowl. LOL!
Found it ! it's a bit different from what i know because you used lumpia instead of rice paper. anyways looks great !
I Iike using lumpia better, it doesn't stick to your teeth! Haha
hi Chef! can you clarify the 3 tbsp of sugar for the filling. In the video, you say and add it, but looking at the recipe, i don't see it. I see the 3 tbsp for the fish sauce. thanks.

Is dark soy sauce a different product from sweet dark soy sauce?
Yes. It's just dark and not sweet.

Yes. Absolutely. Separate them and freeze them BEFORE you stack them together. That way they won't be frozen stuck together.
@@cheftuan aaahhh thank ou for the tips!! I always have problems when i try to freeze gyoza and egg rolls, they always end up stuck and broken.

I would not recommend that. It'll result in over cooked meat.
Question: That looks like a lot of Sugar... Is there a version w/out Sugar?
You can not add any sugar but it won't have the balance of flavors.

Real Vietnamese egg roll (Chả giò) is wrapped with the thin transparent / cellophane / rice paper wrapper and *not* the Chinese spring roll / Chinese egg roll wrapper.
Vietnamese rice paper (Bánh Tráng) doesn't soak up a ton of oil like the Chinese wrapper does; therefore, it makes real Vietnamese egg roll (Chả giò) taste so much lighter and crispier than the heavily oily Chinese roll.
Vietnamese transparent rice paper can be purchased in Vietnamese-American grocery stores in North America.
Chinese roll wrapper is way too coarse, is way too thick compared to Vietnamese rice paper (Bánh Tráng), and will soak up a ton of oil. It is suitable for Chinese food which is much heavier and much more oily when compared to Vietnamese food. Chinese wrapper isn't suitable for Viet rolls.
Lumpia is the same as Chinese roll wrapper.
Thank you for your watching my video and for your response. My mom and dad love chả giờ using bánh tráng. I prefer it with the wheat/lumpia wrappers. My grandma made better tasting chả giờ w the lumpia so that's why I prefer it. 😀
My girlfriend says these are decent but they are not lumpia level. Is this allegation correct.
