  • WHAT IS TEQUILA?
    Tequila is a distilled spirit made from the blue agave plant made in the Tequila region which consists of 5 states - although the majority of Tequila is produced in Jalisco, Mexico. Regulations require that Tequila be made from 51% blue agave but quality tequila is made from 100% blue agave.
    The agave plant takes at least 6 years to reach maturity. The heart of the agave, known as the pina, is then harvested, roasted and mashed - the juice collected from the mashing process is then fermented before being distilled at least twice.
    Mexican regulations state that it must be bottled between 35 and 55% but this number differs in other countries. The US requires it to be a minimum of 40%, for example.

    TYPES OF TEQUILA
    There are 4 main types of Tequila. Tequila is primarily aged in ex-bourbon barrels which separates tequila into these 4 sub-categories…
    1. Blanco or Silver which is clear in colour and aged up to 2 months
    2. Reposado - which is golden in colour and aged for 2-12 months
    3. Anejo - which is dark amber in colour and aged for 1-3 years
    4. Extra-Anejo - which is dark brown in colour and is aged for 3 or more years
    BRIEF HISTORY
    Agave spirits have been made in Mexico for over 500 years. But, in the late 19th century in the lowlands of Jalisco things began to change. Mezcaleros in and around the town of Tequila started to favour the blue agave in fermentation and distillation.
    At the same time, they found cooking the agaves with indirect steam in above-ground ovens gave the spirit a cleaner flavour so they abandoned the traditional earth-pit ovens which tended to impart a smokier character
    TEQUILA TODAY
    There are over 1,300 brands of tequila produced by approximately 150 distilleries with only 15 producing just the one brand. And Patron is one of those distilleries.
    At Hacienda Patron, the pina is hand-chopped, baked in small brick ovens and crushed by a 2-tonne volcanic stone Tahona wheel - one of the more labour intensive methods for making Tequila.
    These are premium tequilas which lend themselves to sipping neat or mixing in cocktails rather than shots at the bar. I’d recommend using the Blanco in a Margarita, the Reposado in a Paloma and the Anejo as a whiskey replacement in classic cocktails such as the Old Fashioned or Manhattan.

    - Fruit & citrus on the nose.
    - Smooth & sweet.
    - Peppery finish.
    Reposado
    - Oak wood and fresh agave on the nose.
    - Fresh agave, oak, citrus and honey.
    - Subtle vanilla finish.
    Anejo
    - Oak, vanilla and raisins on the nose.
    - Oaky, vanilla, raisin and honey.
    - Caramel and smoky finish.
    AÑEJO OLD FASHIONED
    - 60ml Añejo Patrón (2 oz)
    - 5ml Simple Syrup
    - 1 dash of Angostura Bitters
    - 1 dash of Regans Orange Bitters
    TEQUILA MANHATTAN
    - 60ml Añejo Patrón (2 oz)
    - 30ml Carpano Antica Sweet Vermouth (1 oz)
    - 2 dashes of Xocolatl Mole Bitters

    A few choices of my wording may easily be misunderstood so I need to clarify a couple things…
    1. Tequila is a recognised Appellation of Origin (AOC) and can only originate from an officially delimited region, which includes 181 municipalities in five Mexican states, being the entire state of Jalisco and specific bordering areas of the surrounding states.
    Tequila is a town/city and therefore when I mention “region of Tequila” it could be misconstrued as the town/city itself instead of the AOC delimited region.
    2. I mentioned that it can be aged. When aged it is often in ex-bourbon barrels. Note that this statement does not state the ex-bourbon barrels are a requirement - they CAN be aged in other oak but it is common to use ex-bourbon due to their prevalence.

    Love it, as always. I'm doing a presentation on Tequila as part of my Cert 3 in Hospitality and this hits the nail on the head. I may even show part of this in the presentation to the class to give some ideas on tasting notes to expect and what you can do with tequila (I'll definitely credit you, of course).     One tequila cocktail I really like making and drinking is the Infante! It's a super tasty and creamy riff on a margarita I think that is super easy to drink all at once.
    3/4 oz of orgeat
    3/4 oz lime juice
    2 oz of tequila Blanco (or reposado)
    3 drops of orange flower blossom water
    Shake and serve over ice and garnish with nutmeg!

    Thanks for the 101 Steve! I can attest to the sipping yumyness of a Tequila from a rather enjoyable period of binge watching Queen of the South with a nip in hand :-)
    My fav Tequila cocktail is the El Lúpolo - much fun to be had trying different IPAs in the mix.
    Need to get myself a good Anejo and try that Old Fashioned!!

    My favourite is Casa Noble.
    Some specials ones are Hornitos Black Barrel and Herradura Ultra Anejo.

    Great 101. My favorite tequila cocktail would have to be the Oaxacan Old Fashioned.
    2 oz El Tesoro Reposado tequila
    0.75oz Del Meguey San Luis Del Rio Mezcal
    1-2 bar spoons of Agave syrup
    2-3 dashes Angostura bitters
    Garnish with flamed orange peel😎🥃

    I love a good old fashioned, but I make my own bitters and tinctures depending on what's in season. I just made one with Avion Anejo, homemade lemongrass bitters, and some pomegranate honey syrup.

    Tequila and just about anything! Love a traditional Margarita, a Paloma, or a Bloody María. Top off a Michelada with a good shot of reposado. There's now cristalino tequila. Have you done a video yet? Herradura's is great! They call it ultra añejo. Waiting on a bottle to come any day now. Cheers from Indiana!

    LOVED THIS VIDEO! Patron is my go-to for tequila - so happy you did this video. Steve, I’ve been working on my top-4 all time cocktails (aka “Mount Rushmore” of cocktails) and at the top of my list is the Oaxaca Old Fashioned. It’s 1 1/2 oz Reposado (although I just started using the Anejo Patron), 1/2 Mezcal, 1 heavy bar spoon of agave syrup, 2 dashes Angostura bitters, orange twist. It is AMAZING!
    By the way, the other cocktails are the Enzoni and the Amaretto Sour (Morganthaler’s version). My fourth spot is still open and would love to hear yours and others suggestions for what could be my fourth all-time best cocktail.

    With good tequila like Patron anejo I want the tequila to stand out: 2 Oz Patron, 1/2 Oz lime juice, 1/4 Oz agave syrup, tiny pinch of sea salt. On the rocks in an old fashioned glass.
    Also for a regular Margarita I like subbing in St. Germaine elderberry liquor instead of an orange liqueur. The herbal elderberry and tequila seem like the perfect pairing. Nice vid Steve. Thanks 👍

    I LOVE tequila!
    DOBEL, might be the nicest I've ever had, in a Tommy's it's really unbelievable. A cheap great tequila is tapatio or ocho. With lime and soda or coke even is so tasty.
    - Also patron is great too :)

    Love the history lesson! I'd be curious about the history of mezcal and how it relates to tequila. I know they're different, isn't it all tequila is a mezcal but not all mezcal is tequila? Like squares and rectangles lol

      Tequila is a type of mescal, distinguished by the makers. Like "champagne" versus sparkling wine.

    Just recently I was making a rum old fashioned and found that adding a small amount of all spice dram made it extra interesting. Now I think I’ll have to try that in a tequila old fashioned as well 🤔

    Fav tequila drink? Definitely my own coconut margarita… which I usually make with a reposado. I have not tried the Patron Anejo. I’ll have to give that a whirl!!

    I recently tried this jimmy buffet margarita recipie, 1oz repasado ,1/2 oz silver, 1/2oz lime juice, 1/2oz Cointreau, 1/2 orange curaçao, shaken over ice and strained into a rocks glass, sault optional and garnish with a lime wheel, give it a try and let me know please

    a new twist to extra añejo is a filtered tequila añejo at least twice mostly three times to make it a clear or cristalino tequila, a smoother tequila

    Since you ask viewers for their go-to tequila cocktail, I will tell you mine even if it makes me seem unsophisticated. My favorite tequila cocktail is the classic Margarita, made simply with blanco tequila, orange liqueur, lime juice, and simple syrup, and drunk super cold immediately after being poured from the shaker. It's honest and almost pure in its simplicity. Even using agave nectar instead of simple syrup is too fancy for me. And since you're talking about Patron products in this video, I will add that Patron Citronge is a tequila-based orange liqueur that works very well in Margaritas (because the liqueur's tequila base is not detectable as an additional flavor in the Margarita). So go ahead and call me unsophisticated. There's a reason why the Margarita is the most popular mixed drink in the US.

      I love the classic margarita as well, but the traditional version that you mentioned has too much sugar for me. I like to really taste the tequila, as opposed to drowning it out with sugar. I recently switched out the orange liqueur for fresh mandarin juice and used only a drizzle of agave syrup, along with some good reposado and lime juice. It's outstanding!! The agave syrup brings out the beautiful notes of the tequila. Just my opinion, but you might wanna try it : )

    Love the tequila. Hate the 1.75 bottles. Hard to pour without a spill. I haven’t found a pourer that fits.

    My go-to Tequila cocktail is called Colores (Spanish pronunciation). Discovered it on a vacation in Mexico. I build it on ice. It's pretty and tasty.
    2 oz Tequila
    4 oz Orange juice
    1 oz Pineapple juice
    1/2 oz Grenadine (let it run down to the bottom to give it a bright red layer at the base)
    Float about 1/2 oz or so of a Cab or Merlot or red wine of choice to give it a rich red layer at the top.
    Oh so good!

    I bet Patron Extra Añejo would be an even better substitute for Whiskey in an Old Fashioned and a Manhattan. Because it’s aged for 3+ years so it would have an even more Oak’y flavor than the Añejo.

    I really like my cocktails to be 90% other ingredients 10% alcohol. I love your sweeter drink videos and i wish you would do more of them. As for me, my usual Patron cocktail is a bunch of lemonade or limeade with an ounce of patron and a bit of cherry syrup. I love the citrus dominant flavor with just a hint of the cherry and the agave from the patron. Very light drink.

    Patron is by far has the smoothest taste. You need to test the patron coffee tequila

    My go-to tequila cocktail is definitely the Paloma. I usually make it with the reposado version of Espolón tequila.
    Super refreshing.

    tequila matchmaker is a site that shows ratings on tequilas, as well as if they are additive-free - they can have 1% additives (sugar or worse) without saying anything - even if they say 100% agave

    I noticed they didn't send you the purple box- the coffee liqueur tequila. My favorite tequila drinks are El Diablo and of course good old Margarita.

    As a gin/whiskey guy trying to get into tequila, it's intimidating.
    I think a lot of the challenge/intimidation factor is in the sustainability of the product.
    Additionally, I've been slow to get into it because it's not clear which tequila is made via oven vs autoclave vs diffuser - especially when the quality declines as you move from oven to diffuser - and the diffuser brands (which generally add the 'tequila flavor' back in after distillation) definitely don't advertise the fact.
    Long diatribe all saying that tequila is hard to get into for a layman that isn't planning on shooting it.
